Red Velvet Cake IV

Ive always wanted to try to make a red velvet cake and Im SO glad I tried this one. Its magnificent! I also added almost double the food coloring, one ounce is just not enough. I used cake flour and the batter was very smooth. 9 inch pans worked fine for me. The frosting does NOT need a whole cup of butter. I used about 3/4 cup and still had to add about a whole cup of powdered sugar. Over all, superb.

Hmmm. At high altitude (5800 feet) the carmel was overdone at 242 degrees. Next time I am going to do the drop test sooner.

Shredded Potato Quiche

Spinach and Spaghetti Squash Quiche

Delicious and Delightful, the bread crumbs make a perfect light crust (I used italian style) and the squash makes for a nice texture and firmness to the quiche.

Nan's Potato and Egg Frittata

I love this! The potatoes turn out tender inside and crispy golden outside, the eggs are just right. I was lucky to have a 9" plate to use. But overall, Yowza! Yummers!

Chicken Noodle Soup I

Perfect I have a cold and don't wanna cook make me feel better soup. As one of the commenters suggested I added a can of cream of chicken and mushroom soup, two teaspoons of white pepper, one teaspoon parsley, one teaspoon celery salt and one tablespoon salt. And the soup was amazingly delicious. I will make this every time I am sick from now on.

Creamy Chicken Rice and Veggie Bake

I used chicken drumsticks and removed the skin after cooking for about five minutes. I added one can of water after the cream of chicken soup and one can of chicken broth to the mixture. I also used one cup of regular rice and one box of rice a roni. I added one cup of frozen corn and one of frozen broccoli. I thought this was fine, not amazing, and will probably not make it again. But my husband loved it, he loves all concoctions of rice and veggies with chicken, so thus it gets three stars.

White Chocolate, Chocolate Cookies

I usually have a hard time with chocolate cookies, but these cookies are amazingly soft and chewy, just like brownies. In my opinion the equal parts brown sugar and white sugar is what makes them so soft, and the batter looks waaaay thicker than usual cookie dough. But they turned out perfect! Don't change a thing! My only substitution was that I only used 1 1/2 cups of white chocolate chips and would use less next time, but other than that I think this is a perfect cookie recipe.

Delicious Chicken Casserole

I love this. Using the stock from cooking the chicken in the casserole is a great idea, and I used two cups of it in which to cook the rice, which enhanced the flavor as well.

Shaker Herb 'N' Meatball Soup

I did not change a thing about this recipe except to add one cup of chicken stock to the cooking liquid. I also added a cup and a half of frozen peas along with the meatballs. The vegetables were not overcooked and the meat was perfectly tasty with the called for seasonings.

Roasted Creole Potatoes

not bad - very good blend of seasonings and spices. I boiled the sausage with the potatoes, but still think the potatoes could have stood to be a bit more crispy. Allover good, though, I will make again.

Baked Potato Soup

Amazing and delicious - perfect for a cold winter day. I doubled the recipe and it still only served four of us (because it is so yummy) but I used waaay more flour even still (2/3 cup) and 1/2 milk 1/2 broth for the liquid. I used a cup of sour cream instead of the half and half - stirred it in at the end with the cheese - and it was perfectly creamy. I love the addition of hot pepper sauce - which adds a nice kick - and I didn't so much "dice" the potatoes as I did "squish them out of their skins" into the roux. All in all this is a keeper - a huge hit at my house.

Famous Butter Chicken

wow. Perfect, moist, tender baked chicken. I baked for 45 minutes, and changed nothing about the ingredients except for the amount of butter as suggested by other users. The crackers make a great crust. Will use often in the future.

Spinach Rice

Excellent. I used a bunch of fresh spinach rinsed and pulsed in the food processor. I used 1/4 cup mozzarella and baked for 40 minutes. Will make again, often.

Banana Crumb Muffins

These muffins rock! I beat the egg and then added the sugar to the egg before mixing the egg to the bananas, and I think this helped distribute the bananas through the flour mixture somehow. In any case , this recipe was ridiculously easy and will be made again and again and again in my kitchen. I looooooove the crumb topping!

Turkey Bow Tie Skillet

I really like this recipe - I followed the directions of others and added 1T of chili powder and 1T of red pepper flakes to the turkey while it cooked. In addition to the veggies called for I added some chopped red pepper and mushrooms. I followed the advice and added 20 oz of chicken broth instead of one can, and to thicken things up I added one small can of tomato paste with the tomatoes. After all the modifications this recipe is great and will be made again, often.
