Hmmm. At high altitude (5800 feet) the carmel was overdone at 242 degrees. Next time I am going to do the drop test sooner.

Red Velvet Cake IV

Ive always wanted to try to make a red velvet cake and Im SO glad I tried this one. Its magnificent! I also added almost double the food coloring, one ounce is just not enough. I used cake flour and the batter was very smooth. 9 inch pans worked fine for me. The frosting does NOT need a whole cup of butter. I used about 3/4 cup and still had to add about a whole cup of powdered sugar. Over all, superb.
