Ultimate Twice Baked Potatoes

Reviewed: Feb. 15, 2005
I thought this was a very good base recipe. I am a vegetarian so I omited the bacon. I used 3/4 cup low fat sour cream and 3 oz of low fat cream cheese. I omited the milk and reduced the butter to 3 tbsp. I also reduced the green onions by half and added a minced clove of garlic. I dried out the empty shells to make the filling easier. They were tasty!

Greek Style Potatoes

Reviewed: Feb. 25, 2005
These were quite good. I cut back on the olive oil and water as some have suggested. I also used veggie bouillon. I substituted oregano for the rosemary. I also added 1 tbsp. of cidar vinegar for zip. Yummy yummy!

Favorite Peanut Butter Cookies

Reviewed: Mar. 1, 2005
These cookies are really good. They are soft and chewy and not too sweet. However, I'm sure this is the recipe on the back of my Kraft Peanut Butter!

Chocolate Peanut Butter Cup Cookies

Reviewed: Mar. 2, 2005
These turned out really well. However, after reading the other reviews I made some adjustments. I used 1 cup of smooth peanut butter, only 2/3 cup dark brown sugar, only 3/4 cup of semisweet chocolate chips and only 6 peanut butter cups. I dropped the dough from a level 30ml (1/8 cup) measure and baked them for 12 minutes at 375 instead of 350. Next time I think I will add just a little more peanut butter cup. They turned out perfect though. Crewy, moist and not too sweet.

Garlic Salmon

Reviewed: Mar. 2, 2005
This turned out perfectly. I used wild salmon and it came out moist, flaky and really flavourful. I will cook all my salmon this way in the future. Thank you for a great recipe!

Mock Chicken

Reviewed: Mar. 4, 2005
I tried this and it turned out firmer for sure. However, it also changed colour from cream colour to more of a tan colour. I hope I didn't do something wrong...

Estrellita Salad

Reviewed: Mar. 5, 2005
This was awesome. I didn't have enough dressing (only 1/2 cup) so I add some salsa and some italian dressing. I'm not the biggest fan of black olives so I substituted black beans. I also added one hass avocodo diced and 1 tbsp. of lemon juice. Yummy!

Mexican Casserole

Reviewed: Mar. 8, 2005
I made this for a quick and easy supper. I made a few additions. Like other users I added 2 cloves of minced garlic to the onion and sauted them both in oil bofore adding the beans. I also added 2 tsp. of taco seasoning to the bean. I ended up using 1/4 of the bean mixture per layer because I had 4 layers...I let the casserole rest for 5 minutes so it would stay together. Very good!

Tiramisu Layer Cake

Reviewed: Mar. 13, 2005
I made this cake for a dinner party last night and what a hit! Everyone loved it. It was a little time consuming especially the frosting. A good tip is to place 4 strips of wax paper around the egde of the cake plate that way when you done frosting you can carefully pull them out and your cake plate is clean! Next time I'm going to do 2 layers coffee (more powder) and only one layer white. Also I think I will add more booze! :) ***UPDATE: Here are my tips after making this cake several times: Make two cakes, one white, one coffee and split them into two layers each after they are baked and cooled. (You'll have two coffee layers and two white layers). Before adding the instant coffee to the cake batter, dissolve it in some water. In addition, don't add liquor to the whipped cream; add a pinch or two of instant coffee instead. The people who had icing that soured or wouldn't thicken had too much extra liquid (not enough fat to liquid) and over beat their cream. Whipping cream does turn into butter and buttermilk when over beaten. Adding a little bit more confectioners sugar will also keep the icing "set". I use one 8 oz package cream cheese, 2 tbsp sour cream and 1 tbsp cream for the mascapone. I hope these tricks help!

Insanely Easy Vegetarian Chili

Reviewed: Mar. 23, 2005
I as not a big fan of this chili and neither was my husband. I tried adding more chili powder, pepper, garlic powder, onion salt, red chili flakes, cayanne pepper and tabasco and it still tasted too bland. We did like the mix of veggies and the corn but i think I will stick with my original recipe :(

Burger or Hot Dog Buns

Reviewed: Mar. 29, 2005
These turned out perfect after a made a few adjustments and alterations to the method. I used 4 tsp. of yeast and only 1 tsp. of salt. I also used 5 1/4 cups of flour. I also only heat the milk, water and sugar to 105 degrees not 120 as this would kill a lot of the yeast. I added the salt after the flour as salt also will kill the yeast. After I kneaded the dough, I greased it, covered it in a bowl and let it rise for 1 hour. I punched it down and then shaped it into 12 buns and baked them for 16 minutes. They turned out perfectly fluffy and not to sweet or dense. Next time I think I will add so onion or garlic powder for additional flavour.

Vegetarian Cabbage Rolls

Reviewed: Apr. 10, 2005
This wasn't bad per se but I had way too much filling left over. I also thought it could have been more flavourful. I was not a fan of the tomato soup and if I make this again I will use marinara sauce instead. Thanks though for your effort.

Sweet and Sour Faux Meat Balls

Reviewed: Apr. 10, 2005
I didn't use the sauce do I cannot comment on that but the "balls" were good. I omitted the sage as my husband isn't a fan and I used half the cheddar and half mozza cheese. I also added lots of garlic and used walnuts instead of pecans. They turned out tasty!

Kitty Litter Cake

Reviewed: Oct. 30, 2005
I could only find tootsie roll migees so I combined some to make bigger poos. I also tried to bury them in the cake crumbs a little for an authentic effects. I used green coloured coconut instead of the extra cookies. It was a hit.

White Chocolate Raspberry Cheesecake

Reviewed: Jan. 15, 2006
Very good. I used graham cracker crumbs instead on chocolate for a more traditional taste. I also dropped quarter size circles of sauce on top the cheesecake (pre-baking) and drew a toothpick through them to make hearts. I am going to make this for Valentine's day. Thanks for a great recipe.

Peach Upside Down Cake II

Reviewed: Apr. 16, 2008
I didn't have the zest or the orange juice so I used the juice from the can of peaches. The first time I made this, it overflowed all over my oven. I put some tinfoil under the next time and had no problems.

The soup had a nice flavour. I used kidney beans and veggie broth. I didn't have any tomato paste, so I used a small can of tomato sauce. I also added peas and corn. Delicious!

Butter Flaky Pie Crust

Reviewed: Aug. 8, 2008
I tried, unsuccessfully, to keep this very cold. I fould that by the time I could easily roll it, it was too warm to tranfer to the piepan. I will practice this one. I agree that it could use a touch of sugar.
