Ice Cream Cone Treats

I tried these with my large ice cream scoop (about 1/4 cup) and most overflowed. The one that had the last of the batter (maybe 3 Tbsp) came out perfectly. Next time I'll find a scoop that measures 3 Tbsp and use that to fill.

Chicken Enchilada Soup I

If this were named something different it would be a nice soup. But, it is called 'chicken enchilada soup' and it doesn't taste like an enchilada at all. The sauce gets lost in the tortillas, broth and 1/2 & 1/2. Maybe replacing the 1/2 & 1/2 with sour cream would help. I think I want a soup that is less creamy and more tomato based. Will keep trying and may post my own creation soon.

Caramel Popcorn

Incredible recipe! I make this everytime we have company or are visiting family & friends and am usually asked to bring larger portions on the next visit. Definitely best with nuts. My fav is a mix of cashews and slivered almonds. Time consuming but worth the effort.

Baked Dijon Chicken

Wonderful! Fast, easy and super flavorful. I thought the mustard might be too strong but everyone loved it. The cheese gets a little bubbly and crisp on the bottom and that makes the flavors even better. A keeper!

Salsa Chicken

Super easy and nice flavor. I would recommend butterlying the chicken if they are thick as the seasoning didn't make it into the breast. If you are planning ahead, put the taco seasoning on the night before and let it really sink in. Topped with some black beans for fiber and texture and the presentation was really nice. Can't wait to make quesadillas with the leftovers!

Irish Egg Rolls

Wasn't sure what to expect from this recipe but the results are fantastic! Made these with wonton wrappers and just know everyone will gobble them up. Serving with horseradish mustard as suggested by another reviewer and think it will add the perfect kick.

Cheeseburger Egg Rolls

Used won ton wrappers to make these as apps. Would only change the cheese from cheddar to american for a creamier texture. Can't wait to serve them with some ketchup & mayo!

Savory Pork Stew

Great recipe, cooked all day in the crockpot, then pureed some of the broth and veggies to make it thicker. Plenty of potatoes so used those instead of adding more cornstarch. Will be making this again with a few changes. Add carrots and celery, use cream corn instead of cream soup.

Mondi's Super Simple Chicken

Excellent flavor! Used Basil, thyme and rosemary, garlic, s&p - don't forget to season with salt & pepper. Rubbed butter mixture under skin, then melted remaining and poured it over the top. My 3 yr old non-meat eater gobbled this up! Made for 25 people and they loved it. So easy. Baked for 50 minutes and the meat was perfectly cooked. Forgot the lemon juice that others recommended but will try next time.

Focaccia Bread

Excellent and easy recipe. I'm not a bread maker and am very impressed with how light this bread is. Used 1/2 milk and half water and italian seasoning. Used an 8" cake pan to bake so it would be easy for a large party sandwich. Next time I'll make a large rectangle or 2 rounds as it turned out quite thick. Can't wait to make this again and add different ingredients and toppings! Thanks Terri!

Hot Spinach and Artichoke Dip

YUM! This is such an easy and delicious recipe. Brought it to girls' night and it was gobbled up. Warmed in the microwave to combine ingredients and then baked a few minutes, but watch that it doesn't brown - not as flavorful. Served with bread and tortilla chips, think the chips were best.

World's Best Bacon Cheese Dip

Only ok, seemed to be missing something. We love cheese and thought there was too much in this. Crackers were too heavy so we tried tortilla chips and agree with another reviewer that corn chips would be nice. Ended up splitting it up and adding different ingredients to see what might help intensify the flavor. Hot sauce helped, didn't make it spicy, just added a little zing. Probably won't make this again but it was nice to experiment with.

Swordfish a la Siciliana

made this with tilapia and chicken and everyone loved it. forgot the pine nuts but will add next time. will try 1/2 the raisins next time as they clashed with the capers. thought the entire small onion was going to be too much but it was wonderful. I blended half so it was a smoother consistency and liked the appearance better. cooked zuchinni, summer squash and carrots until tender-crisp and tossed with the mix and topped with a little feta - delightful recipe!

Penne with Asparagus and Mushrooms

Great recipe! We're not big on tomatoes and this scored high with all. Used 1-2 tb sp olive oil because you don't need much. Diced petite tomatoes, added lemon juice for some acidity. Then spinach and capers because I love them. Used 1/2 c of half-n-half and it was delicious. Hubby (who isn't crazy about asparagus) really loved it and told me not to change a thing. Can't wait to eat the leftovers for lunch!

Filet Mignon with Rich Balsamic Glaze

Great! Took others advice and simmered the glaze alone until thick. I wanted a syrup so it needed to simmer longer than the steaks. It smelled horrible while cooking, but tasted great. Used a cab-sav and the sweet-tanginess of the wine was a nice balance. Never cooked steaks on the stovetop before and they turned out great. Be sure to let them rest before eating and they'll taste even better.
