I love to entertain, so cooking is the best. My freezer is always ready to have guests and friends like to visit to see what we are eating that's new...and some old favorites.
My favorite things to cook
Spicy food! Southwestern eggrolls, anything mexican. The spicier, the better. Traditional home cooking with a twist. Add something new and we'll try it.
My favorite family cooking traditions
Making chocolate doughnuts with my Dad. The kids always had the holes, so yummy.
My cooking triumphs
My daughters' birthday cake. A train party with a choo choo cake. Marshmallow fondant made the train look wonderful!
My cooking tragedies
Mac-n-cheese with onions. Hold them for anything else, not mac-n-cheese.

Ice Cream Cone Treats
I tried these with my large ice cream scoop (about 1/4 cup) and most overflowed. The one that had the last of the batter (maybe 3 Tbsp) came out perfectly. Next time I'll find a scoop that measures 3 Tbsp and use that to fill.

Chicken Enchilada Soup I
If this were named something different it would be a nice soup. But, it is called 'chicken enchilada soup' and it doesn't taste like an enchilada at all. The sauce gets lost in the tortillas, broth and 1/2 & 1/2. Maybe replacing the 1/2 & 1/2 with sour cream would help. I think I want a soup that is less creamy and more tomato based. Will keep trying and may post my own creation soon.

Caramel Popcorn
Incredible recipe! I make this everytime we have company or are visiting family & friends and am usually asked to bring larger portions on the next visit. Definitely best with nuts. My fav is a mix of cashews and slivered almonds. Time consuming but worth the effort.
