Barbie's Tuna Salad

Tasty! I enjoy tuna salad with pickles and curry so this recipe is a keeper for me. I ended up making tuna melt sandwiches with this salad.

Shredded Beef Chimichangas

This was easy to make and was quite tasty! I ended up modifying the beef slightly. I sauteed some onion and garlic, and added a can of green chilies. Then I added the already cooked beef and mixed it all together to put into the tortillas. I think without the addition, I wouldn't have enjoyed them as much. I also took someone else's advice and put cheese in the tortillas. Yum. Thanks for the recipe!

Mexican Rice II

Easy to make with a mild, but good flavor. I ended up burning the bottom layer of rice because the burner was up too high, but mixed in it tasted really good!

Chicken Piccata with Artichoke Hearts

My husband and I really enjoyed this dish! I followed the recipe as is, however, I only used 1/2c flour. The ingredients blend very nicely together. I know some people added sundried tomatoes, but personally I think that would ruin the delicious simplicity of this piccata. Real Italian food is based on simplicity and seasonal ingredients. I served this over linguine. Thank you!

Slow Cooker Carolina BBQ

This is my favorite recipe on this site! I love the Carolina style BBQ sandwich with coleslaw. I do vary the cooking time and how long I keep it cooking on Low/High - it just depends on how long I have to let it cook. I also add a few tablespoons of liquid smoke along with the other spices, but those are the only differences. Thank you for posting!! I can't wait for dinner tonight. : )

Creamy Spiced Coleslaw

This is my favorite coleslaw! It has the right combination of sweet and tart. I use it primarily for cookouts and to top the Slow Cooker Carolina BBQ from this site. It is even better the next day. Thank you!!

Smoked Salmon Scramble

Very tasty! I followed the recipe as written, but I did add some dill weed (would have used fresh if I had some). Good and easy. Yes, as many reviewers state, cream cheese would be amazing (when is it not?!), but this is more healthy and still delicious! Thanks for posting. : )

Chicken And Artichoke Penne With A White Sauce

I found this to be pretty bland, and the bechamel sauce not acting as a good pasta sauce. I think my husband and I would prefer an alfredo or butter sauce instead. I had to add more salt after cooking in order to eat. I'm wondering if marinated artichoke hearts would help give this more flavor OR sundried tomatoes would be tasty.

Artichoke Chicken

Easy and very tasty! I used organic mayo, frozen artichoke hearts (boiled before using), and grana padano in place of parmesan (a less expensive alternative here in Italy), mixed in garlic powder and black pepper since I don't have garlic pepper. I also decided to add a small can of sliced black olives, which I have to say was what did it for me. YUM. Served with cous cous and mixed veggies on the side. Not the healthiest dish available, but very flavorful. I can't wait to eat the leftovers...Thank you!

Oatmeal with Apples

Very good! I used the microwave - makes it much faster with less clean up (and energy). I microwaved everything but honey, added that last along with ground flaxseed. I also used half apple juice, half water. Tasty!

Sweet Lime Iced Tea

This tea is very refreshing and easy to make! I steeped my decaf tea in the sun and then added the juice of four small limes and the recommended amount of sugar. I don't know why people are recommending limeade - it's not the same as fresh limes!!! If you don't have the three minutes it takes to cut and juice four limes, then why are you looking at a recipe site in the first place?! So...once you juice the limes, you can use the remains to clean your sink. That takes about the same amount of time as using a Mr. Clean magic eraser, but smells much better. Almond Flour Pancakes

Very good! I didn't have any almond flour at home, so I used 2c of all-purpose flour - will try with whole wheat next time. I also added chopped strawberries. The consistency was strange, so I was afraid that the pancakes wouldn't cook well. BUT, they turned out great! Nice and fluffy, good flavor. Thanks for posting!

Easy Roasted Pork

Very tasty and very easy! I used the slow cooker for this recipe. I rubbed the roast with salt and pepper and seared it, put it in the slow cooker, and poured the rest of the ingredients over the top. I put it on high for one hour, and low for 5-6 hours. I also basted it occasionally. I had a few carrots that I wanted to use up, so I chopped them up and added to the pot for the last 1-2 hours. Delicious - like candied carrots! Very flavorful. Next time, I would probably cut back on the brown sugar to 1/3 cup. Thank you!

Black Bean Chili

This was very good. I used mixed beans and all fresh veggies - the colors are so vibrant! I used an immersion blender instead of a food processor/blender which made pureeing much easier. It wasn't the best chili I've ever had, and I would be hard-pressed to say that it was better than the meat version, but it's worthy competition.

Spicy Pakistani Zucchini

Easy to make! I followed other comments and only used 1/2c of water, that way the sauce wasn't too watery. I also added 1/2t of curry powder. The flavoring was good, but I didn't find it spicy at all, but I enjoy spicy food. I wondered if it would be more flavorful if reheated the next day. I served with Basmati rice.

Best Ever Party Appetizer

This was a hit at a recent luncheon I attended! I used calamata olives and three flavors of goat cheese (regular, garlic and herb, and roasted red pepper) mixed together. I put all of the ingredients into a zip-lock bag, and after marinating overnight, molded it into a ball to serve. I also toasted the slices of french bread. I had many people asking for the recipe - thank you!

Slow Cooker Stuffing

Well. I halved the recipe and used a bag of store-bought wheat bread, and 2 cups of broth. One cup added right away, and the second after the 45 minutes on high. After 5 hours, I ended up leaving the lid off and turning the slow cooker back on high to attempt to boil off the excess liquid. The stuffing tasted quite good, but looked pretty gross. I will probably try this again since so many other people sound like it was more successful. I'm guessing the photo was taken prior to cooking...
