Eggplant and Pepper Parmesan Sandwiches

The first time I made this, I followed the recipe exactly. Then I made it again (because it was so good) and I omitted the Parmesan cheese and added baby spinach, then I put it all on focaccia and baked it at 300 for 5 minutes to warm it up. Yummy! My new favorite sandwich.

Baked Shells in Sauce

This is an excellent starter recipe! I doubled the pasta & sauce and used veggie mozz. cheese. I also had about 1/3 cup of sliced onions in the fridge, so caramelized those, then set them aside and cooked the diced mushrooms & about 1/4 cup of diced carrots in the same pan with a tablespoon of water and a tablespoon of butter. I mixed the tofu, onions, carrots and mushrooms together. I took other suggestions and layered the dish, topping it with nutritional yeast and throwing in chopped basil throughout. Absolutely delicious!

Lentil and Green Collard Soup

This was yummy! Made it tonight for dinner and we gobbled up a couple of bowls. I cooked the onions & garlic together for about 5 minutes, then threw in the spices and cooked for another minute, then added the lentils and followed the rest of the recipe. Was great served with a light salad and some crusty bread. Will definitely make this again.

Raspberry Salad Dressing I

This is very good, although a bit thick. I used 1/2 C frozen raspberries and raw sugar. Yummy on salad greens, dried cranberries and feta cheese.

Awesome Asparagus Sandwich

This was delicious and so filling. I used cheddar cheese instead since I don't like swiss and it was divine. We used these yummy fennel and pepper rolls from our supermarket and it was the perfect combo of flavors. We had some left over last night, so we had them again for lunch!

Fluffy Pancakes

These are very good and easy to make. I make them up a couple times a week for my little boys and they gobble them right up. They soak up the syrup and taste yummy!

Garlic Chicken with Orzo Noodles

I tried everything to make this flavorful. I cooked my orzo (which was veggie flavored) in homemade chicken stock, I marinated my cooked chicken (left over from a roast) in lemon and parsley, I added capers and chunks of tomato, I threw in some extra stock in the last stage, and I topped it all with fresh parm. cheese...but it still lacked any flavor. This pasta dish needs a sauce of some sort. Other than that, I don't know how one would get liven this dish up.

Jackie's Sausage Soup

This was delicious, definitely a perfect soup for those cold winter evenings. I didn't have a pepper, but I kept everything else. I used apple cinnamon sausage and cooked it in the big pot, and when it was almost done, I tossed in a chopped onion and 4 whole, peeled garlic cloves. I also cooked the orzo separate so that it didn't soak up all the broth and added it with the spinach and then heated through for 5 minutes. Yummy!

Country White Bread

This is a great, simple white bread. I've halved the recipe and made just one loaf several times now and it gets gobbled up for sandwiches and toast. Today, I'm making the full recipe try and freeze a loaf so they don't all eat it all at once.

Cabbage and Kielbasa

This was delicious and cheap. I used 2 red potatoes sliced, instead of canned. Next time I will fry the kielbasa for a different texture. Yummy!

Avocado Tacos

These were yummy and a great alternative to the basic taco. I fried my corn tortillas for a minute on each side and I cooked some black beans and onion with a little cumin. I put the beans, avocado, tomato, cheese, cilantro and some spinach on each tortilla and baked for about 5 minutes, just long enough to warm it all up. I will definitely make this again, maybe add more spices to zip it up a bit.

Broccoli Chicken Braid

This was delicious and easy. The only changes I made were adding shredded carrots and steaming my broccoli because it was frozen. I lowered cooking heat to 325 and it took about 20 mins.

These are absolutely delicious! I've been trying to find a good recipe for potstickers and this is it. I exchanged ground turkey for the pork because it was cheaper and I thought it sounded good...it was. I agree with another viewer that some fresh grated ginger in the mix would have added a special something.

Spinach and Carrot Quiche

I think this recipe needed some cream or milk to give it a more fluffy texture. It didn't fill my 2 pie crusts and they looked so sad. However, the taste was good, maybe a bit too much nutmeg. I also added diced red peppers and split the cheese - 1 cup sharp cheddar and 1 cup muenster. I also used fresh spinach and just added a teeny bit of water to the pan for a few minutes so it could wilt.
