Crunchy Chicken Casserole

This casserole was pretty good, but mine turned out a bit dry. I would definitely recommend seasoning the chicken as you cook it before putting it in the casserole. It was a bit bland. Also, I cut the mayonnaise in half. Next time, I'll use another can of cream of chicken soup and add some broccoli.

Buckeye Balls II

These are always delicious! I made these for several tailgates this year, and though the chocolate melted in the southern heat, they were still gone by gametime!

Homemade Mac and Cheese

I LOVED this recipe! I tend to be picky about my mac and cheese, and this one was awesome. It reminded me a lot of the macaroni and cheese served at a local steakhouse, McKendricks, that is my favorite. For the 3 cups milk, I used whole milk (I only use whole for cooking) to give it a richer taste. Also, I used 1 sleeve of ritz crackers and crumbled them for the top, to give it a little more crunch. My mother even borrowed the recipe for our Thanksgiving instead of her usual mac and cheese casserole! It was a big hit!

Classy Chicken

I absolutely loved this meal!!! I made it for my boyfriend and I as a celebration meal for his new job. A couple of tips: As the chicken and veggies cooked in the broth and wine, it began drying up a bit, so I added a bit more wine and a teensy bit of the broth. I also used a jar of minced garlic instead of a clove, and a jar of diced sindried tomatoes in olive oil. The final result was delicious! I would recommend draining the olive oil from the tomatoes before adding them to the skillet. I plan to make this for a family dinner party very soon! This is now one of my favorite chicken recipes!

Baked Ziti I

This recipe is delicious! Tonight was the second time I have made it, and it turned out even better than the first time. Per some suggestions in other reviews, I added a tablespoon of minced garlic to the ground beef as it was cooking. Also, I bought one huge jar of Prego traditional rather than 2 16 oz ones. This gave me a little bit of extra sauce, which I used to coat the bottom of the pan before adding the noodles. I also added the sauce on top of the noodle layers, rather than on top of the provolone layer. For the mozzarella on top, I used 2 cups instead of just 6 oz (I prefer reallt cheesey dishes). I only cooked it for 45 minutes uncovered, which allowed the mozzarella and permesan to brown to perfection. The dish is huge, so definitely be prepared to have lots of leftovers (I only made it for two).

Blueberry Crumb Bars

This recipe was delicious! I made it for a bake sale, and it was a huge it. I used real butter instead of shortening, as per many recommendations. Also, I used frozen blueberries for one batch. For the others, I used frozen sliced strawberries. If you have a sweeter tooth, the strawberries are definitely the way to go. I personally preferred them to the blueberry bars, but both were great!

Chicken Mexicala

This recipe was delicious!!! The first time I made it, it was a little bland for me, so I added taco seasoning to the chicken, onions, and peppers (for a little extra kick, add a little Tobasco too or top with salsa). Since my family and I are not mushroom fans, I substituted Cream of Chicked for the cream of mushroom soup. I also used a bag of the tortilla rounds chips for layering, then cumbled a couple of handfuls of the chips to put on top to give it a little crunchiness. The 4-cheese mexican blend shredded cheese from your grocery store works great too, and you can add a layer of cheese after each layer of chicken for a yummy cheesy dish. Its really easy to make and the leftovers keep well. The dish has been a hit!
