The World's Best Turkey

Reviewed: Dec. 30, 2005
This was fantastic! I used half a red onion and half an apple on the inside, and we used sparkling apple juice instead of champagne (cheaper). The only issue was we did not buy a thermometer, and it didn't cook all the way through in the time allotted. It might be because this was a free range ornagic one, but who knows. We laughed, tossed it back in, and when it came out it was insanely juicy and absolutly amazing. This was the first turkey I have ever cooked, and now my family swears that they won't be using any other recipes now, it was so good. Thanks so much!

Moroccan Salmon Cakes with Garlic Mayonnaise

Reviewed: Jun. 23, 2005
Excellent! Even my picky sister loved these. I used fresh spinach cut up very small, and cut back to one large egg. I try to stay away from frying, so instead I baked them in muffin tins! Grease the pans, and as they start to brown on the top (20 minutes or so usually) take them out and let them cool for 15 mins or so before getting them out of the pan. These freeze and reheat incredibly well, so each time I make them I double the recipe and freeze half for lunches. Thanks for sharing! ETA: I am using lemon or lime juice now instead of the orange. I found we couldn't taste the orange juice, but when I use 2 cups of couscous with 2 1/2 cups of water, I substitute the 1/2 cup for other citrus. It's awesome that way.

Chicken Cordon Bleu II

Reviewed: Jan. 20, 2011
I have made these several times, and I always get rave reviews! Any leftover rolls get sliced carefully, rolled in a bit of egg/herbs/breadcrumbs mix and baked again quickly on high heat. Best chicken nuggets ever!

I love pumpkin pie, and this is a nice treat for me without adding to my hip measurement.

Fantastic. I like adding a bit more orange juice, but YMMV.

King Cake

Reviewed: Jun. 29, 2009
Really dissapointed, the cake was fairly flavorless, and dry. I swear I am good at baking (do it often enough). Still looking for the perfect King Cake recipe!

Sweet Potatoes

Reviewed: Jul. 10, 2005
Fantastic! My parents both hate sweet potatoes, but I didn't tell them I used them, they just assumed I had a different type of seasoning. They loved it! I used the Safeway Garlic and Red Pepper seasoning with olive oil, and tey came out beautifully. Thank you for the inspiration!

Roasted Vegetable Lasagna

LOVE the mix of veggies! Great as is, though being the garlic-aholic that I am, I added a bit more, and fresh basil leaves. to the sauce.

I really enjoyed it, but kicked the seasonings up a few notches by adding extra of all of them, that's the way my family likes it. Thanks for sharing!

Blueberry-Lemon Pound Cake

Reviewed: Jun. 29, 2009
Needed a glaze of water, lemon juice, and powdered sugar to bring it to life (hence 4 out of 5 stars), but everyone raved about the final product. Frozen floured blueberries were great in this, though it made about a cup and a half too much batter for my bundt pan!

Best Spinach Dip Ever

Absolutely fantastic! No one could stop eating this, and I have been 'told' that I must make it again for Christmas eve. The only thing I added was some diced artichoke hearts and water chestnuts. Highly suggested!

Best Ever Muffins

Reviewed: Aug. 15, 2005
Just finished baking three dozen of these, half with blackberries and half with strawberries and chocolate chips on top, and they are fantastic! I used frozen fruit and it was juts fine. Light and fluffy, though not a sweet muffin. I upped it to a cup of sugar instead for the blackberry muffins and they were better.

Golden Sweet Cornbread

Best cornbread ever. I liike to switch back and forth, using more cornmeal and less flour depending on who I am cooking for, but it always turns out absolutly divine.

Best banana bread recipe ever! I tripled my latest batch- froze two loaves, one with choc chips one with the topping, and made 15 muffins with either choc chips or topping. I get asked for this recipe by everyone!

2 suggestions: 1) one cup of chocolate chips is definetly enough. 2) Make a triple batch- the double I just made has been ravaged by my family and is half gone! Awesome recipe, thanks!

Elizabeth's Extreme Chocolate Lover's Cake

Reviewed: Jun. 23, 2005
This was the first cake I ever made, and boy did it come out perfectly! I found that it made a tad too much icing and ganache, but we just dipped strawberries in them the next day ;) Make this, you won't regret it!
