Absolutely the Best Nacho Dip Ever

Absolutely fabulous. Got great raves. I used medium hot chunky salsa, replaced cucumber with chopped olives and topped it all with some chopped, seeded tomatoes. It disapeared fast. Yum, Yum. However, it does not makes 64 servings. 10 ladies took care of it all by themselves.

Chicken Enchiladas I

This was a very easy and delicious recipe. I made it for 16 people. Going by others reviews, I used less oregano, but added some ground cumin. I left out the water and found that all the tomato sauce made the mixture too runny, so I cut back. I also substituted enchilda sauce. Fantastic. Yum, Yum.

Black Bean Salad

I served this with enchiladas, but I found it a little bland. I would try and heat it up more and add more seasoning. But the presentation and texture were great. I mixed it earlier in the afternoon and added the avocado just before serving.

Margarita Cake

Wow! What a keeper. I could only find lemon, but that didn't matter. I also had to use cointreau, but the taste was still orangey. I made the icing thicker and topped with lime peel. Then I wet the rim of a cake stand and dipped it in margarita salt. It was great. Yum, Yum. Byt the way, it did taste like a margarita.

Dip For The Stars

My, did this one get rave reviews from my guests! I used less feta and pesto and substituted sundried tomatoes in oil as one reviewer suggested. I put basil leaves around the bottom and one on top. It looked very professional and tasted wonderful. I will make it often. I also made the cheese mixture the day before to cut down on prep time on the day.

Beef Bourguignon II

Loved this dish. I made for 6, using 2 cups wine & 1 cup beef broth. Needed to add a little more broth during cooking. Used fresh mushrooms and no added onions, since I didn't have any. Using top round, this cooked in 2 1/2 hours total.

Green Olive Chicken II

This was so easy and so tasty. Used diced tomatoes and broth instead of water. Make sure to push the chicken down in to the rice mixture while cooking so that flavours permeate the meat. A little crushed red pepper would spice it up a little.

All-In-One Beef Salad

House Fried Rice

I added extra eggs and soy sauce. Used shrimp and leftover pork, also sliced mushrooms. Tried with leftover long grain and wild rice mix, but it was too seasoned. Will make often with regular rice.

Cranberry Sauce

This is so easy and delicious. I will never go back to canned as long as I can get fresh cranberries. It got rave reviews at Christmas dinner and I've been telling everyone about it. It's nice and saucy.

This actually gets a 10! I love amaretti and this is so easy and makes wonderful cookies. I made them for Christmas and had to give most of them away. But it was so easy to make more. Try them, you'll like them.

Asian Spiced Chicken in Wonton Cups with Vanilla Apricot Sauce

I gave up on the wonton wrappers as they were chewy when cool. Used filo dough cups instead. Made chicken and sauce the day ahead. Will make a bit spicier next time.

I will never go back to canned again. i have raved about this to everyone. it thickens up wonderfully, lasts several days in the fridge and is wonderful on turkey sandwiches.

Lite Raspberry Mousse

I made these for Christmas dinner as an alternative to the heavy Christmas pudding. Everyone had one. Could not get frozen raspberries in syrup, so added some redcurrant jelly to sweeten. They were so good. I topped with a dollop of cream, fresh raspberries and a mint leaf.
