Asian Turkey Barbecue on Sesame Scallion Toasts

Reviewed: Jan. 18, 2006
This use up the last of the holiday turkey and what a finale. I would not add any salt as the Hoisin sauce and Barbecue sauce are salty enough. I did add some 5 spice powder and hot pepper flakes. Yum. I guess you could add some chopped water chestnuts for texture. Will save recipe for next Christmas turkey leftovers.

Baked Ziti with Turkey Meatballs

Reviewed: Jan. 16, 2006
Thanks Christine for this recipe. Made it tonight and it is very good. I baked the meatballs for 15mins at 475. I also mixed the meatballs in my food processor and added oregano. The meatballs were dry and I was concerned that they would be dry in the ziti, but they were suprisingly moist after baking the casserole. Made two smaller casseroles and froze one. A note though, I did find the 1 pound ground turkey to be a bit misleading as other recipes specifically ask for cooked turkey.

Mexican Spiced Turkey Tortilla Soup

Reviewed: Jan. 16, 2006
I followed the recipe except for using chicken broth instead of water and bouillon. It was very spicy. HOT! We like spicy, but I had to water this down with lots more stock. Added cooked rice which made it more of a meal. Will make again, but will tone down a little.

Cream Puffs II

Reviewed: Jan. 2, 2006
i've made choux pastry before, but this was very easy. I made ahead and reheated in oven to dry out earlier in day, then filled when cool. i like to melt dark chocolate and beat in evaporated milk for the sauce. Very rich.

Lite Raspberry Mousse

Reviewed: Jan. 2, 2006
I made these for Christmas dinner as an alternative to the heavy Christmas pudding. Everyone had one. Could not get frozen raspberries in syrup, so added some redcurrant jelly to sweeten. They were so good. I topped with a dollop of cream, fresh raspberries and a mint leaf.

Grilled Steak with Olive-Blue Cheese Glaze

Reviewed: Jan. 2, 2006
the sauce was tasty, but not very attractive. Very runny, even though I reduced the sauce. Served it with a beef tenderloin.

Asian Spiced Chicken in Wonton Cups with Vanilla Apricot Sauce

Reviewed: Jan. 2, 2006
I gave up on the wonton wrappers as they were chewy when cool. Used filo dough cups instead. Made chicken and sauce the day ahead. Will make a bit spicier next time.

Very delicious. I made the spread in the food processor. Cherry tomatoes were very fiddly, but tasty. Great for a party.

Amaretti

Reviewed: Dec. 27, 2005
This actually gets a 10! I love amaretti and this is so easy and makes wonderful cookies. I made them for Christmas and had to give most of them away. But it was so easy to make more. Try them, you'll like them.

This is so easy and delicious. I will never go back to canned as long as I can get fresh cranberries. It got rave reviews at Christmas dinner and I've been telling everyone about it. It's nice and saucy.

House Fried Rice

Reviewed: Sep. 10, 2005
I added extra eggs and soy sauce. Used shrimp and leftover pork, also sliced mushrooms. Tried with leftover long grain and wild rice mix, but it was too seasoned. Will make often with regular rice.

Green Olive Chicken II

Reviewed: Jun. 28, 2005
This was so easy and so tasty. Used diced tomatoes and broth instead of water. Make sure to push the chicken down in to the rice mixture while cooking so that flavours permeate the meat. A little crushed red pepper would spice it up a little.

Beef Bourguignon II

Reviewed: Jun. 28, 2005
Loved this dish. I made for 6, using 2 cups wine & 1 cup beef broth. Needed to add a little more broth during cooking. Used fresh mushrooms and no added onions, since I didn't have any. Using top round, this cooked in 2 1/2 hours total.

Dip For The Stars

Reviewed: Mar. 12, 2005
My, did this one get rave reviews from my guests! I used less feta and pesto and substituted sundried tomatoes in oil as one reviewer suggested. I put basil leaves around the bottom and one on top. It looked very professional and tasted wonderful. I will make it often. I also made the cheese mixture the day before to cut down on prep time on the day.
