Cinnamon-Raisin Granola

Just okay. My coconut is a bit overcooked and has left my granola with a slightly burnt taste. Perhaps next time I will add it at the end.

Peanut Butter Cup Brownies

I would give it 1000 stars if I could!! Also try adding a small scoop of peanut butter and topping it with chocolate and peanut butter chips! really, really delicious!!

Mrs. Sigg's Fresh Pumpkin Pie

This was my first time making a fresh pumpkin pie. It was very delicious and not too sweet. I wanted to use a frozen pie crust but since I went through all the effort to roast a pumpkin I thought a homemade crust was in order. Crisco's recipe was easy and delicious.

Sausage and Bean Ragout

It was good. A bit salty but that could be remedied by the canned products you choose to use. It is a quick, simple meal to put together after a long day of work. thank you for the recipe.

Garbanzo Bean Chocolate Cake (Gluten Free!)

This was my first attempt at a gluten free recipe. The flavor was very good but not excellent. It was difficult to serve in slices because it did crumble. I would not make it for company but I will make it again for my family because I love the idea of chocolate cake being a good source of protein and fiber :) Thank you for the recipe!

Chef John's Caramel Chicken

Husband was not too fond of it but I loved it! Perhaps if I cut down on the sugar, use fish sauce which I could not find here in the Caribbean and add some vegetables husband may change his mind. Will definitely try again.

Chunky Cheesecake Brownies

I followed the recipe exactly. They were VERY good. They were chunky, they were very sweet and chocolaty. However you could barely taste the cheesecake. I love sweets but I must admit these were a bit much for me. Cut them very small. I would definitely make them again but increase the cream cheese part and decrease the sugar.

Layered Chicken and Black Bean Enchilada Casserole

I did not think this was anything great but I must admit it did taste better the 2nd day because all the flavors had blended together. Hubby liked it better than I did which is why it gets a 4 and not a 3.

Eclair Cake

followed recipe exactly. I read a lot of reviews discussing frosting or not - the frosting is a must for it to taste as an eclair does. We tried it after 15 hours and I really did not like it. It tasted like soggy graham crackers. I brought it to a party the next day to get rid of it and many people liked it so I tried it again and it was better. Morale of the story - it must be chilled for at least 24hrs.

Beef Tips and Noodles

Made exactly as stated. It was pretty good but it was a bit salty and there was not enough sauce to cover all the noodles. Also I think one hour at that temperature was too long. I pulled my dish out at 45 min and the meat was very done.

Carrot Rice

I really liked this. I didn't have peanuts so I used toasted pine nuts but I am sure it would have tasted just as good with the peanuts. Otherwise I made it exactly as written. It had a nice earthy mild taste. It's definitely a keeper for me!
