Creamy Hot Cocoa

I used a half cup of sugar in the recipe. I think it is rich, chocolatey, and delicious. This is my 'go to' hot chocolate recipe from now on!

I followed the recipe exactly. They were VERY good. They were chunky, they were very sweet and chocolaty. However you could barely taste the cheesecake. I love sweets but I must admit these were a bit much for me. Cut them very small. I would definitely make them again but increase the cream cheese part and decrease the sugar.

Layered Chicken and Black Bean Enchilada Casserole

I did not think this was anything great but I must admit it did taste better the 2nd day because all the flavors had blended together. Hubby liked it better than I did which is why it gets a 4 and not a 3.

great recipe. You must keep the pot moving though because i burned my first batch and it was not fun cleaning the pot! Don't forget a dash of salt!! YUMMY!

Eclair Cake

followed recipe exactly. I read a lot of reviews discussing frosting or not - the frosting is a must for it to taste as an eclair does. We tried it after 15 hours and I really did not like it. It tasted like soggy graham crackers. I brought it to a party the next day to get rid of it and many people liked it so I tried it again and it was better. Morale of the story - it must be chilled for at least 24hrs.

Beef Tips and Noodles

Made exactly as stated. It was pretty good but it was a bit salty and there was not enough sauce to cover all the noodles. Also I think one hour at that temperature was too long. I pulled my dish out at 45 min and the meat was very done.

Carrot Rice

I really liked this. I didn't have peanuts so I used toasted pine nuts but I am sure it would have tasted just as good with the peanuts. Otherwise I made it exactly as written. It had a nice earthy mild taste. It's definitely a keeper for me!
