Since i live in Alaska, fish is usually served 4 out of 7 nights per week. I love trying different things with salmon and halibut. It does get challenging...

Extreme Chocolate Cake
This has got to be the best cake I've ever made! So moist... even after 3 days! I, too, was concerned about the "thin" batter after the extra cup of boiling water, but baked fabulously! I made exactly as directions read. This will be our "birthday" cake recipe for years to come!

Rhubarb Cream Pie
This is a wonderful, simple recipe. I made mine in a cast iron skillet and had no problem with "overage". Very good by itself and even better topped with vanilla ice cream. This is definetly a keeper.

Killer Cheesecake
What a great recipe! Using quality sour cream and Mexican vanilla... I always get rave reviews when I make this. Yummo!
