Mom's Best Peanut Brittle

Reviewed: Dec. 20, 2014
Love, love, love this! I have been making this for the past 2 years like the previous reviewer. It's definitely a timing thing. I can't imagine making it without a candy thermometer. I add 1 tsp. of vanilla right from the start. I use 3/4 cup of peanuts when the temperature reaches 250 degrees exactly! I also make sure that it absolutely, positively hits the 300 degree mark before taking it off the heat to add the butter and baking soda. When I pour the mixture onto the buttered cookie sheet I just use the back of my wooden spoon to spread it out. This was a Christmas Holiday treat last year and now my kinfolk are begging for more this year! Thanks Amanda for a great recipe and a new Holiday tradition!

Best Brownies

Reviewed: Nov. 1, 2014
I thought these brownies were delicious! I followed the recipe exactly. For the frosting I halved the confectioners sugar and added 2 tbsp. of water to spread easier.

Adrienne's Cucumber Salad

Reviewed: Jul. 19, 2014
Made this recipe as written...I used a mandolin to slice the cukes. I did salt the cucumber slices for an hour to drain the water. Still the finished product had quite a bit of liquid...but we actually liked it that way. I thought about adding some celery seed, but the recipe (as is) was awesome! Maybe next time! Thanks so much for the recipe. It's a keeper!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Reviewed: Dec. 24, 2013
I've made this a few times now! Delicious! Love the dry rub! I marinate it for about 12 to 24 hours. Then I baste it with the scrumptious glaze. And if that wasn't enough...I then wrap in in bacon and baste again...that's right! YUM! I bake it at 450 for 15 minutes and then lower it to 350 until the internal temp is 140/145. I then take it out and cover it and let it stand at least 15 minutes. Watch the bacon while it's in the oven, you may need to cover with foil. Thanks for a great recipe idea!

Crustless Spinach Quiche

Reviewed: Dec. 27, 2012
Loved this as written, next time might add a little bacon and a few more herbs. I liked using the Muenster cheese, but think it would be great with any cheese. Will make again.

Samoan Panikeke

Reviewed: May 20, 2012
This is delicious! Found it to be a bit time consuming but worth it! I waited to heat the oil once the dough was ready, next time I'll heat the oil while preparing the dough. I used a sauce pan with 6 cups of oil, but they kept sticking to the bottom. We just lifted them up gently and that was fine, but wondering if that is normal or if there is a way to prevent that! Thanks for the recipe! AWESOME flavor!

This was really quick and really easy. We have blueberry bushes and we're always looking for creative things to do with them. I used 2 tablespoons of cornstarch for a thicker sauce. Delicious!!!
