Coconut-Cornflake Cookies

Yummy! I cut the sugar to 3/4 cup, I'll probably try 1/2 cup next time. Perhaps that recipe's author used unsweetened coconut, and that's why it calls for so much sugar? Baking for 14 minutes was perfect, golden and toasty and chewy. I mixed the egg whites for a full five minutes on high.

Real Southern Cornbread

WOW! I loved, loved this cornbread. The taste is fantastic with just butter, or with honey also. I used canola oil instead of butter (though it smoked when I added it to the pan, a higher heat-tolerence oil might work better), and used a rice flour based flour mix. I used 2 1/2 c corn meal, and 1 1/2 c flour. The crust is the BEST part of this bread!! I had extra dough that didn't fit in the cast iron pan, and baked it in muffin tins. Still tasted great, but I missed the amazing crisp and chewy crust.

Flourless Peanut Butter Cookies

I made these for my wheat allergic child. I like them; and they definitely grow on you. I discovered that (with Adam's PB) they are flat when the dough is room temp, and puffy if the dough is chilled.

Ground Beef Stew

I love this recipe the way I make it! I don't care for canned tomato soup, so I replaced it and the pureed tomato with two cans of diced tomato and some vegatable broth (I buy "better than buillion", which comes as a paste). I also upped the seasonings a bit.

Jam Muffins

I really liked these muffins. I used a gluten free flour, soy milk, home made lower-sugar plum jam, and reduced the sugar to 1/4 c. And I added an additional egg. Lately most muffins have seemed too sweet to me, but as I made them, these were perfect.

Baked Zesty Carrots

It was pretty good. I used milk instead of cream, and crushed rice chex (what I had) instead of corn flakes. It had a nice mild flavor, but just wasn't our favorite.

Roasted Sweet Potatoes & Onions

We really like this. A nice alternative to the sugary sweet potato dishes. I've never used the amaretto liqueur, but follow the rest pretty closely.

Mini Meatloaves

Very tasty! I liked the "mini" idea... the fat drains away from the meat loaves. We put left overs into hefty hotdog buns. The sauce was a bit intense tasting... I think next time I'll put half of it on the meat loaves and serve the other half on the side. I added garlic.
