Melt in Your Mouth Marinade

This is fantastic marinade! However I did alter it slightly as per others suggestions (was worried about it being too salty). I used 1/2 cup reg soy sauce (then added water to it to equal 1 cup) and also added 1/4 cup of brown sugar. I marinated two (1 1/4lb) pork tenderloins for about 24 hours, then grilled them using the '7-6-5 method', which I will add here for those who may be interested in trying it. Best grilled tenderloin ever! Turn on all burners and preheat your gas grill to 450 degrees. Timing is important so use a timer, and don't lift the lid to peek! Place tenderloins in center of bbq and grill on one side for 7 mins. Then flip over and grill for 6 mins on other side. Then flip once more (I 1/4 turn them to a side that wasn't on the grill bottom, if that makes sense, lol) and turn off your grill and wait 5 mins before removing tenderloins. After removing cover with foil and let rest for 5 mins. This method of grilling makes for a nice seared crust and leaves the meat juicy and tender inside, and will work with any marinade (but this marinade was made for grilling as the taste was incredible). I'm not great on the BBQ and have overcooked my tenderloins every time I've tried. These were perfection and the only way I'd grill them now! :-)

Ground Beef Stroganoff

This was a delicious basic recipe. Comfort food at it's best. As others suggested I did alter it. I added 3 cloves of fresh minced garlic and a tsp of worcestershire to 1 1/2lbs of ground beef and the diced onion, after browning. Also added a packet of chicken gravy mix, and a chicken oxo cube dissolved in a 1/2 cup of boiling water. I used a whole onion and a can of mushrooms (would prefer fresh but didn't have it). I omitted the mayo and mixed together in a separate bowl 1 cup of cream. 3/4 cup of sour cream, a can of cream of mushroom soup, and the dried mustard and garlic powder. I stirred that in, and only because the color was kinda off putting, added about 2 Tbsp of kitchen bouquet. I didn't add any salt as there's more than enough in the oxo/gravy packet. Did add pepper though. Simmered for about 10 mins on med/low heat then stirred in approx' 3 cups of cooked macaroni. Yummy! Made lots and would easily feed a family of four.

To Die For Blueberry Muffins

Fantastic muffins! I've made 6 batches so far using frozen blueberries with no problem at all. Also added vanilla and used brown sugar for the topping, not white. I froze a couple batches and found that although they were still very good, they were so much better when fresh.

Chef John's Italian Meatballs

Absolutely loved these meatballs! Have made them twice so far, and they will be my only meatball recipe from now on. They hold together beautifully (even when defrosted in the micro and simmered in sauce after) and are moist and flavorful. I didn't have ground pork so it was ground beef only. Also didn't have fresh parsley so used dried, and omitted the red pepper flakes, so slightly changed but still keeping within the spirit of the recipe.
