Fat Tuesday Salmon

Excellent recipe! I made it for a Mardi Gras dinner. Yum! I'm going to saute the peppers and onions next time, and kick it up a notch with even more jalapenos :) Note: the recipe makes 8 patties, not 4 as indicated.

High Altitude Banana Chocolate Chip Cookies

These are really unique cookies! My husband loves them. Great to have a recipe tailored to the high altitude folks like us! Thank you for that :) Personally I felt that the chocolate chips overpowered the banana taste, so I would suggest using milk chocolate chips (as opposed to semi-sweet) or dried diced apricot pieces or chopped walnuts. Otherwise, a good recipe! Thanks!

Outrageous Chocolate Chip Cookies

My husband said it best: "These are amazing!" A really good recipe! And the finished cookies look perfect, too. Mine came out a bit dry, but I can adjust for that. Also, the recipe made 2 dozen (not 3 dozen) cookies for me. Thank you for posting this! :)

Irish Soda Bread

This recipe is FANTASTIC!!! Five stars, absolutely! I made it for St. Patrick's Day and it came out perfectly. I would highly recommend it to anyone!!! Be prepared for super-sticky dough -- I was laughing because I couldn't get it off my hands :) I'm going to keep this Irish Soda Bread recipe in my permanent files -- AWESOME!!!

Cranberry Orange Cookies

These cookies are fabulous! A++++++! I didn't even bother to put the glaze on them because they are fantastic without it. Totally yum-acious! I'm at a high altitude (7000 ft.) and I didn't need to change a thing in the recipe. Baked them for 14 minutes and they came out perfectly. THANKS for this recipe! :)

Oil Cookies

These cookies are really cute! I had run out of butter but wanted to bake something sweet -- and these fit the bill perfectly! I had to add a bit more flour to get the dough workable, but other than that the cookies came out great. Beware... they are addictive since they're so light! :) Note: I live at an elevation of 7000 feet and did not need to make any changes to the recipe. Thank you for posting this unique cookie recipe; I enjoyed the story about your grandmother as well! :)))

Scottish Shortbread IV

AWESOME RECIPE!!! I reduced the amount of flour to 4 cups and made cookies instead of cutting the dough into strips. Twenty (20) minutes turned out to be the ideal amount of time for baking in my oven. They came out perfectly! And they are delicious! THANK YOU!!! :)

Zucchini Raisin Muffins

AWESOME! This recipe only made 6 muffins for me, not 12, but the taste is fabulous. The BEST thing is that this recipe can be easily adapted for diabetics by using whole wheat flour and Stevia (2 tbl. plus 2 tsp. Stevia in place of 1/2 cup sugar) and it still tastes great! Thank you for an excellent recipe!!! :)))
