Libby's® Pumpkin Cranberry Bread

This came out of the oven 15 minutes ago. I have since devoured two pcs and had to really hold myself back from eating a third. So good, the cranberries add just a bit of tartness. Will be a favorite around here.

Home-Fried Potatoes

5 stars for the method. I didn't follow this recipe to a tee, I was looking for a method to fix a lot of potatoes for a large group without it taking forever in the skillet. I boiled the potatoes (5#) for 15 minutes as called for, then cooled them and put in ziploc bags to take on my trip. The morning I was to cook breakfast I cut them up, then sauteed the onion and set aside. Then I fried the potatoes with pepper and seasoned salt and added the onions back in when the potatoes had some crisp on them. Resounding success.

Caesar Salad Supreme

I am giving this 2 stars b/c my husband said it was okay, not great. I hated it - and I fixed it exactly as stated. I have fixed dressings with a mayo base and liked them just fine. However, in this recipe all I could taste was mayo and anchovies. The flavors seemed muddy to me. After I tried it, I did go back and try to brighten the flavor of the leftover dressing with more lemon, then even added some red wine vinegar. Still gross. I just had a chicken breast for dinner that night.

Delicious Ham and Potato Soup

So easy and delicious! I did make one change in the prepartaion: I sauteed the ham, onion and celery in 1T of butter for a couple of minutes before adding the potatoes and water in step 1.

Chicken Enchiladas II

Followed the recipe exactly. It wasn't inedible, but I will not be making again. I had doubts when I reviewed the recipe (cream of mushroom soup in enchiladas?) but was intrigued by the ratings/reviews and decided to make anyway. My husband and I agree that this is not a keeper.
