Spring Lime Tea Cookies

Reviewed: Feb. 29, 2008
These are EXCELLENT!!! DO NOT CHANGE THIS RECIPE, with one exception. I love lime..however I love all citrus. Try substituting the lime ingredients with lemon or orange. My families favorites were orange...my hard to please dad, lemon. Me? All of them!! I also added just a tad more of zest as I love the color and texture it adds to the cookie. Thanks so much for this new easter favorite, everyone is getting their favorites in their basket.

Mama's Best Broiled Tomato Sandwich

Reviewed: Sep. 25, 2007
Phenominal..doesn't look like too much but tastes wonderful. I used 2tblsp. light mayo, added ~1 - 1.5 tsp. italian seasoning instead of parsley, added a crushed garlic clove to the mayo mix, pepper and parm. cheese. Didnt have mozz. cheese so sprinkled tomatoes with parm. cheese right before broiling in toaster over and yummy. Made it on marble seedless rye bread (all I had)Thanks for sharing this one..loved it!!

Garlic Fried Rice

Reviewed: Aug. 16, 2007
This had such a nice flavor! It seems so simple, but its yummy. A little dry for me so I think I will use half milk and half water next time for the rice. Served with "Baked Haddock" & sauteed spinach.

Italian Biscotti

Reviewed: Jan. 22, 2007
This was really great. I too omitted the anise and used more almond extract as Im not too crazy about anise, they are awesome. Gave to our Biscotti loving pal and she thought it was the best shes had..she felt this even before we told her I made it. :) Only thing is, Im not sure if it was my oven or not,it took much longer to "toast" than the recipe said. A+++

Scalloped Corn

Reviewed: Jan. 14, 2007
My family and friends I LOVED this. I used a can of white shoepeg corn instead of yellow and it was yummy. The sour cream adds a different taste, creamy texture and some sweetness. I will omit the sugar next time as a few people suggested but you should try it the first time with it..everyones tastes are different. For anyone who has looked at my reviews before I always reference my father,as he is culinarily gifted and my worst critic...he asked me for this recipe. If that doesnt say alot I dont know what will. Thanks for sharing.

Rosemary Roasted Turkey

Reviewed: Jan. 10, 2007
WOW! My first attempt at a roasted turkey EVER and it was fabulous. I replaced the water with about 2 cups chicken broth. I rubbed the excess olive oil mixture all over the bird. I basted it every 30 minutes. I read the roasted turkey hints and decided to bake it at 350 just until it started to golden, then the whole bird with foil. 45 minutes before it expected done time I removed the foil and cooked the rest of the way. Then made a superb gravy from ALL the drippings in the pan..YUMMY. Holy cow was it awesome. So awesome, my culinarily gifted father even asked how I did it!! Make This Turkey!!

This one had me worried at first as it didnt thicken up right away as it was supposed to, but it came through with my patience being tested. My first cheese saucer EVER and what a hit, my very picky friends loved it as I served it over broccoli and cauliflower.

Cottage Cheese Spinach Chicken

Reviewed: Dec. 13, 2006
ok, thanks everyone for suggestions. I sauteed the onion and garlic in olive oil, once tender I added the spinach and about 3/4 can of artichoke hearts and sauteed a bit more. Once cooled I added that to the cottage cheese, to which I added 1/2 cup sour cream and 1/4 cup grated parm cheese and a bit of garlic powder. I butterflied the breasts and stuffed then closed with tooth picks. Half way through baking I added remaining stuffing. Once everything is cooked through, I served the left over stuffing I had placed in the baking dish over bow tie pasta. My family LOVED it. Warning: cooking time is much longer than stated in recipe.

These are quite different, but yummy. The only thing that my 3 yr old daughter and I get frustarted with is that they stick in your teeth, but then again what good things don't?? This is a great one for your child to bring into their classroom. Fun to make too. Thanks for sharing. This is now a holiday favorite.

I actually enjoyed this fudge. I tried it for its uniqueness and because my hubby likes candy canes. We loved it. I dont particularly care for white chocolate but this was great. I didnt add any food coloring as I really liked the look without it. Thanks for sharing. I'm going to try this with semi sweet choc. chips too.

Shrimp Cream Cheese Spread

Reviewed: Dec. 6, 2006
Can also substitute canned crab meat for the shrimp which makes it yummy too. My suggestion, to make it a touch less messy, is I spread the cream cheese mixture on the bottom of a decorative pan and then put the cocktail sauce on top. It makes it easier for guests to spread and doesnt ruin your "Creation" like when you put it in the ball form. Wonderful recipe, good one to share.

Quick Black Beans and Rice

Reviewed: Dec. 6, 2006
I liked this recipe. Only thing is it does need a bit more spice for my family...we like spice, but if you enjoy a nicely flavored black beans and rice with little to no "heat" you'll like this.
