Breakfast Upside Down Cake

I wish I would have read the other reviews before I made this. Definitely would use more eggs, less potatoes, and cook longer. I might even layer the potatoes first, the bacon, the egg, and add the cheese at the end. I didn't like adding the cheese first. This is a good meal if you need something different or want all your breakfast items "on the go." I loved sending it with my fiance to work.

Rice Vinegar Basting Sauce

This recipe was amazing. We love barbeque sauce with our salmon and this was a great alternative. Reminded my husband of sweet and sour sauce. Make sure you give it enough time to cook. I thought I'd be smart and cook the sauce while I cooked the salmon but it needs to boil for a while to get to the perfect consistancy.

Bunch's Crab Casserole

Can I give zero stars? Negative stars? This was so dissapointing and I hate to say it, but gross. This must be a hate it or love it kind of recipe. I relate to the woman who said she had to throw the leftovers away. We didn't even get that far. We couldn't even choke it down and I found myself making another meal. All my husband could taste was egg and mayonaise, and I decreased the amount of mayonaise. We couldn't taste the stuffing or the crab. There's another recipe for stuffed halibut that uses stuffing and crab, and it's amazing. I recommend doing a search and using it instead.

Grilled Fish Steaks

This was amazing and worthy of a restaurant. I wanted to make my fiance a really great meal and this did it. There's nothing better than hearing, "Mmmmmm," through the whole meal. I served this with mashed potatoes.

Chocolate Caramel Nut Pie

This pie was a hit with more sophisticated taste buds. I was told that it was restaurant quality and have been requested to make it again. Great pie. The Snickers melt in the middle so use at least the recommended amount to get the chewy, carmely effect.

Fabulous Pesto Pasta Salad

I love this salad and everyone I've made it for does too. This is my "clinch" dish. It's so easy and full proof. I don't use fresh herbs because I usually make it on a whim without grocery shopping. It always turns out great. I think the hardest part is toasting the pine nuts and that's elective! If you're looking for something to take to a potluck or party this is a great choice.

Black Bean Lasagna II

My husband really liked this. I had a hard time reconciling the taste. Is it Italian or is it Mexican? I ate the leftovers today and it was good but it's missing some spice. When I tasted the sauce I thought it was bland so I threw in some basic spices before I even baked it. I think next time I'll add taco seasoning to the ricotta mixture. I added a chedder layer on top and every bite with that is really good. I think it's just a little too bland on its own. I was surprised to read that others had trouble with it being soupie. Mine set perfectly. I made sure my sauce was pretty thick before I assembled it though. Lasagna has gotten pretty old to me and this was a nice twist. Next time it gets more spices though.

Hot Artichoke Dip

I didn't think this was great. My guests liked it but I wasn't wowed at all. I threw everything in the food processor to eleminate any chunks and maybe that changed the taste? I was really looking forward to this after reading the other reviews. I won't make this again.

Banana Bread VIII

Wow. I think that sums it up. I used cake flour and this bread came out like dessert. All I have to say is, "DANGEROUS." The flavor and texture is wonderful. I'm eating it on a Tuesday after baking it on Sunday and it's just as good. This recipe is sooooooooooooooooooo moist. My hubby doesn't like dessert and he was super impressed with this. I'm going to try it with wheat flour and Splenda to see if I can turn this into a daily, healthy treat for us. UPDATE: I massacred this recipe. Whole wheat flour, splenda, and margarine. I was afraid I was wasting my precious bananas but this still turned out great. So if any of you want to make this healthier - you can!
