About this Cook
I was born & raised in Kansas City, Mo. & married my college sweetheart. It was Vietnam days so became a Navy family. We traveled all over the world & raised 4 loving, successful sons. During this time I had the opportunity to sample recipes from Germany, France, Italy, & the Orient. I would have "Surprise Night" on Wednesday nights. Would set the table with tablecloths & napkins...trying so hard to instill a little culture & manners in these guys. Often times they would turn up their noses at the new samplings but they understood that this was dinner & when the table was cleared BY THEM, I might add....nothing was served til morning. THE KITCHEN WAS CLOSED!!! Today we are blest with 2 wonderful daughter in laws & 4 precious grandchildren...one of which is a girl!!! The Janczak PRINCESS !! There had not been a Janczak female in 4 generations so this was a wonderful surprise. Of course today my hubby & I are "empty nesters" & enjoying quiet dinners with wine after a day at work.
My favorite things to cook
We love fish!!! Broiled, grilled, or baked. But also love Mexican Food as well as Italian. With living all over, we have many favorites
My favorite family cooking traditions
THANKSGIVING !!! We always have had large gatherings where folks would bring their special dish to share. After settling in Texas, the tradition continued. We often enjoy 25 to 30 close & extended family members. We watch our Dallas Cowboys (good or bad season)...enjoy a big feast....then watch our Texas Aggies battle the Texas Longhorns. Is a house divided but all in good fun. In Central Texas we might be enjoying 80 degree weather or occasionally 35 degree weather. Either way, the home is warm with love, family, friends, great food & awesome memories.
My cooking triumphs
When living in Guam, I did a Baked Alaska that was served at a dinner party that I was hosting where the Secretary of the Navy & his wife were guests. It was beautiful AND tasted GREAT!!
My cooking tragedies
In our first year of marriage, at Thanksgiving, my hubby had just returned from a 9 month deployment. I volunteered to host Thanksgiving dinner for the single guys and other couples who could not make it back to their hometown for the holiday. Yes, the rest of the story was the turkey was still frozen in the middle. We all, with a good sense of humor, ordered pizzas and still had a good time. Not traditional but filling. I am glad to report that after 40 years, my skills have improved!!!!

Eggplant Parmesan II
EXCELLENT!!! Hubby LOVED it!!! Used 2 good size eggplants. I did sweat them as suggested & rinsed well & dried. Also baked on each side about 10 min to get golden & a little crisp.

Amazing Pork Tenderloin in the Slow Cooker
Followed recipe exactly, it was very tender & juicy!! Needs a little more flavor. Served with baked potato & asparagus I. Will make again. Hubby loved it!!!!

Cranberry Pistachio Biscotti
OMG!!!!!! This recipe is a 10!!! So easy... Followed recipe exactly..but I did add the orange zest which gave it that extra flavor. Can't wait to make for family & friends during the holidays!!! Thanks Gerry!! For sharing!!!
