French Dip Sandwiches

Easy and good recipe. I used a rump roast which was very lean and came out nice and tender. Put on crusty ciabatta rolls with melted provolone and fried sweet onions. Then served the dipping broth on the side to dip them the sandwiches. Everyone loved them. I thought this would also be an excellent recipe for my son at college.

Good for You Greek Salad

This was a very good tasting salad that went well with the soulaki I made. I used a little less feta cheese as I don't like too much feta taste. I also added extra olives because I love them. This would be an excellent recipe in the summer when fresh tomatoes and cucumbers are in season.

Souvlaki

Excellent recipe, however I may try adding some red wine vinegar or red wine in place of some of the soy sauce to make it more traditional. Also am going to try to find Greek oregano. Served this with grilled pitas, tzatziki sauce II, and good for you Greek Salad. Great combo together. My husband absolutely loved this dish, plus we felt that we were eating very healthy which is usually our goal.

Chicken Breasts with Balsamic Vinegar and Garlic

Excellent recipe. Made it exactly according to the recipe except pounded the chicken a bit to make it flatter. I kept the garlic whole as the recipe didn't say to chop it, so I didn't. Just didn't eat the garlic but took it out with the bay leaf. Used good balsamic vinegar. I think the quality of the vinegar can make a difference. My husband gave this recipe a 10 out of 10. Me too.

Flatlander Chili

Great recipe for what I needed it for. My 2 teenagers don't like chli with tomato chunks and this recipe fit the bill. My 16 year old son said it was the "best chili he ever had." The flavor is excellent. If you like more tomato chunks just add canned tomatoes like everyone else did. I followed the recipe exactly and did not find it to be too runny. However I added 2 cans of kidney beans that probably added up to more than 2 cups as the recipe called for. If you let the chili simmer the full hour and a half it simmers down to a thicker consistency. Next time I will make a double recipe however so I have more leftovers to freeze for another meal.

Boudreaux's Zydeco Stomp Gumbo

Excellent recipe. I used andoulle sausage, extra chicken and the 1# of shrimp. Served it with rice in a cup on the side with the Real N'awlins Muffuletta sandwich. Great combo. Everyone loved the gumbo.

Real N'awlins Muffuletta

Great recipe! Everyone loved it. It tasted better than the muffuletta I had in New Orleans. I served it with Boudreaux's Zydeco Stomp Gumbo in a cup on the side, fresh fruit, and cole slaw.
