Fluffy Peanut Butter Frosting

I don't know what happened, but my icing would not become fluffy or blend well at all, it just stayed lumpy. I tried microwaving it as another suggested, but didn't work for me. The only things I can think of that I did a bit differently were that I halved the recipe (as someone else did with success) and used natural creamy peanut butter instead of Kraft because I do not like to eat hydrogenated oils/trans fat. The "icing" would not spread and only tasted okay. Wasted high quality icing sugar on this :( Just wanted to warn others who use natural peanut butter that it might not work!

Soy Milk Pancakes

This is a great recipe! I made 4 BIG fluffy pancakes. I also used egg replacer because I'm vegan and they are still wonderful. Thanks for sharing! :)

Cranberry Sauce I

Fantastic and simple!!! I let it simmer a little longer and I mashed up the cranberries after they started popping and it thickened right up when I put it in the fridge for about 6 hours. Love the mix of orange and cranberry!

Apple Spice Cake

Wow! This was a great spice cake. I made it for a potluck with my friends and the 6 of us finished it in one night! I doubled all the spices and added about a tsp of cloves (I like a lot of spice!) This is easily made vegan too, I used egg replacer for the eggs, and for the butter I used 1/2 cup margarine and 1/2 applesauce, these changes probably cut out about 30 grams of fat or more! I used 2 russets, a mac and a christmas, choppped up small and left out the raisins. Made it the day before and I think this cake really gets better the next day. Didn't need icing, it was soooo moist!!! I did put the c. sugar on top to look like snow...Absolutely great!

Cranberry Oatmeal Drops

These cookies were just ok for me. I originally was just going to cook them without icing, but when I took them out they looked the same as they did going in! They didn't spread or brown at all. I followed the recipe, only using 1/4 cup applesauce and 1/4 cup margarine for the butter, and egg replacer. But I have never had a problem doing that before this cookie. They were also not sweet at all, so I had to make the icing to save them! And it did, the icing was quite good, but probably won't make these again, or will tinker with it. :)

Chocolate Chocolate Chip Cookies I

Wow these were phenomenally good! I didn't have chocolate chips but was craving chocolate big time. I used vegetable margarine for butter and egg replacer for the eggs because I'm adopting a vegan diet (although I did use white sugar) and rolled them into balls flattening with a fork and they taste great! I ate 7 today! My two male non-vegan roomies loved them too! Thanks a bunch! :)

Banana Muffins I

These had a great banana taste, and I love that they are pretty low in fat and calories, but mine didn't rise hardly at all! They turned out small and stayed pretty flat, and they would not cook on the inside at all despite lots of time in the oven. I'd suggest increasing the temp to 400F and perhaps double the recipe to make bigger muffins? Great taste, weird appearance.

Cranberry-Pumpkin Cookies

Mmmmm they certainly are soft and cakey! The tartness of cranberries goes so well with the moist pumpkin taste. I used a little less butter since I had to use canned pumpkin pie stuff which already had oil in it. I didn't have orange zest so used apple juice and left out the nuts. This could be a very adaptable recipe. I got exactly 36 good sized cookies. Thank you! :)

Pumpkin Chocolate Chip Cookies III

Wow! These are great! I just made them, got my last pan in the oven...I followed this exactly and got 32 pretty good sized cookies, but I didn't put in the nuts. It is very close to a recipe my friend gave me. They are so moist and fluffy, thanks for sharing! ;)

No Bake Choco-Peanut-Oatmeal Cookies

Alrighty, this concoction tasted good, but everything else went wrong for me! I followed the recipe, except had to use brown sugar instead of white, but I didn't think it would make such a big difference, my cookies are still gooey after 2 hours in the fridge and show no signs of hardening. It's basically like eating cookie dough, which is alright but I can't take them anywhere and I won't be sharing. And what's with the quantity? 4-5 dozen?? I got 23 normal sized cookies (eating no dough!) I don't know what went wrong but I won't be doing this again.

Healthier Graham Cracker Crust

Tasted pretty good (I omitted the cocoa) but did not quite make enough to go up the sides completely of the pie plate, so it was a bit crumbly. As crusts go, decent, but nothing to rave about. I do like that it's healthy though! :)

Chocolate Banana Cream Pie

This pie tasted absolutely delicious, although it could have used a bit more chocolate and it was a bit hard to cut because of the hardened chocolate. My boyfriend and I made it this afternoon and served it to our friends as well, and everyone loved it. Thanks for the recipe!!! :)

Carnation® Creamy Cheesy Mashed Potatoes

I had to halve this recipe since I was only making it for 2 people and it turned out nicely except it wasn't cheesy enough. I only had skim milk on hand but that worked fine, and added green onions for some kick. I might try some sharper cheese next time. Great side dish, and relatively quick.

Chicken and Mushroom Saute

I made this for my boyfriend and I last night and it was pretty tasty, although it was not as garlicy as I would have liked. My sauce also did not thicken despite extra cornstarch, perhaps I shouldn't have dumped in the whole can of chicken broth...still tasted great though and the brown rice soaked it all up and was great. I served it with cheesy mashed potatoes. Would probably make again :)

Chewy Chocolate Chip Oatmeal Cookies

These were delicious, especially the next day! Very chewy and filling. Maybe use a little less vanilla next time though. I used only half the butter and substituted in a mashed up banana to cut out some fat, they were still very moist! I also skipped the nuts and put in an extra half a cup of choc. chips, mmmmmmmmmmm. Thanks for the recipe!
