Tuna Noodle Casserole from Scratch

This is an excellent recipe. I made a few changes: (1) half-and-half instead of milk; (2) shredded cheddar and Monterey Jack (that's what I had on hand); (3) added 1/4 tsp. of nutmeg and 1 tsp. of lemon juice to the sauce. It turned out really well. I thought it could have used a bit more sauce, but my husband was happy with it as is. It reheats well, too. Will definitely be adding this one to my rotation! Oh - one last thing. I used one saute pan for the veggies and the bechamel sauce because I'm lazy. Worked out fine!

Orzo with Parmesan and Basil

Excellent recipe and so easy to make! I've made it several times, most recently with tri-color Orzo because I happened to have a jar of it on hand. I didn't change a thing, except I didn't garnish with additional basil leaves. Last time I made it, I served it with quick chicken piccata from this site and a side of broccoli. It was a hit!

Slow Cooker Chicken and Dumplings

This was my first slow cooker recipe! After reading some of the reviews, I incorporated the changes that many people made: omitted the onion, added 1 tsp. onion powder and 2 tsp. poultry seasoning, substituted chicken broth for water, used 1 can cream of chicken and 1 can cream of celery, and used only one can of biscuits. I have a 3.5 quart slow cooker, so more biscuits would not have fit! I added the biscuits an hour and a half before the end. I think they still came out a bit gloppy but my husband loved them. Will definitely be making this again.

Beef Enchiladas II

My husband and I both enjoyed this dish. After reading the reviews, I used yellow corn tortillas which I prepared by briefly frying them in hot oil - just a few seconds per side. It worked out well and made the tortillas easy to handle. I used a pre-made enchilada sauce and I added a small can of sliced jalapenos. I put some of the jalapenos in the enchiladas and sprinkled the remaining ones over the top. I'll definitely be making this again!

Italian Leafy Green Salad

I tried this recipe yesterday and it was an excellent accompaniment for a "surf & turf" barbecue. The dressing is superb. I followed the recipe and didn't change a thing. Everybody loved it. This will be a regular in our house!

Heather's Grilled Salmon

This is a superb recipe. I marinated the salmon fillets for about 4 hours. Unfortunately, we had a thunderstorm at dinnertime so I was not able to grill the salmon. As another reviewer suggested, I baked them at 400 for about 20 minutes. I poured on all of the reserved marinade before baking. It was tasty and delicious and there was a nice glaze. My husband and I loved it! Next time we'll try grilling it if weather permits.

Key West Chicken

This is an easy and delicious recipe. I followed Melissa and Adam's suggestion and doubled everything except the soy sauce and used the juice of two limes. I marinated the chicken breasts for about 6 hours. My husband basted the chicken a little with the marinade while grilling. The chicken was tender, juicy and flavorful. Will definitely be making this one again.

Cheesy Broccoli Quinoa

This is a really nice side dish and so easy to make. Both my husband (who knows nothing about quinoa) and I enjoyed it very much. I did not make any changes to the recipe. I used multicolored quinoa from Trader Joe's because that's what I had on hand. I served it with broiled fish. It was delish! Definitely a keeper.

Chicken Asparagus Roll-Ups

I thought it was very good. Definitely a keeper. Two things I would do differently: (1) Buy thin-sliced chicken cutlets. I did pound the chicken breasts but it would have been easier and I think thin-sliced cutlets would have been easier to roll. (2) Pre-cooked the asparagus a bit longer, maybe just a minute. I used fresh tarragon because I had some on hand. The sauce turned out great. I served it with a frozen Bird's Eye rice blend - multigrain with tomatoes, onions and spinach spiced up with Italian seasoning, garlic and olive oil.

Quick Chicken Piccata

This is a delicious, easy recipe. The only things I did different were mixing the salt/pepper/cayenne in with the flour before dredging and using salted butter and dried parsley flakes. It turned out great! I served it with white rice and asparagus. I loved the piquant flavor of this dish and so did my husband. Will definitely be making this one again.
