Vegetarian Split Pea Soup

mmm. i really love this recipe! i did not use the pasta and subbed two potatoes. I also added a poblano pepper just because I happened to have one. make this one the stove top and the slow simmer will make your mouth water all day as it cooks. I pureed 3/4 of it so it was more creamy with some chunks. Eat with a hunk of rustic bread and a beer. Yum!

Spicy Sweet Potato Chips

These were super easy and super yummy. I made mine just for a quick snack and to use the rest of this ginormous sweet potato I had. I cut mine very thin so they were crispier and because of my sweet tooth, ended up wishing they were a tad less spicy. Because of the spice though, I dipped them in ranch dressing (vegan for me) and they were delicious. I will FOR SURE make these again.

i did not change a thing... and they are indeed very dense and rich. ADDICTING. I agree with saying that they are like little brownie bites with peanut butter chips. YUM

Stuffed Mushrooms with Spinach

This recipe was indeed good. Quite savory, but not too rich. I used Smart Bacon, to make this a vegetarian dish.. and also a bit more cheese, just bc i love it. I used 9 baby portobellas for a a more hearty meal addition and it worked great. I will make this again! (the mix.. before stuffed in the mushrooms, was great on crackers too!)

Vegetarian Tortilla Soup

i made this recipe for a going away party and it was a hit! I put blue corn chips in the bottom of the bowl, then ladled on the soup, then topped with grated cheddar cheese and sour cream. Delicious! Easy to prepare and easy to shop for! I will make this again.. probably next time frying up my own tortilla crisps since also are quite easy. yum!
