Deli Style Brisket

Absolutely delicious! My husband loved it. A great meal that can be enjoyed for a couple of days. First as a roast with mashed potatoes, then on sandwitches the next day.

Stephen's Chocolate Chip Cookies

These were great - although I think I will make them into balls and freeze them to bake as needed. They seemed to flatten out more than I like, but my family didn't seem to care - it was just me. Love the dark and milk chocolate together - along with the different nuts. More like a gourmet chocolate chip cookie.

Rainbow Clown Cake

Big Hit! Our German Exchange student joined our family on her birthday... and this is the cake we decided to do for her American Birthday party. It was fun to make and fun to eat. We plan on making it again and again. Maybe with cupcakes next time.

Crispy Orange Beef

The sauce was excellent! Made as written except for substituting 1/3 c orange juice for the orange juice concentrate. I think I will try this with chicken next time. Might cut the sugar to 1/4 c next time (was just a bit too sweet for our taste). Overall - fantastic!

Lite Coconut Cake

A Keeper! Used coconut milk in place of the water in the cake mix directions. Definitely better the next day. You can't go wrong with this one! Edit: Used coconut milk in place of the water, and for the whipped topping (1 1/2 cups heavy cream whipped with 1/3 cup sugar) then add the remaining cup filling. (Doesn't make it lite... but tastes soooo much better).

Butter Flaky Pie Crust

It worked! I can't make pie crust... but I did with this recipe. I froze the butter, then grated it. Lightly tossed it with the flour, then slowly added the water until it formed a ball.

Honey Peanut Granola

Very good - and versatile. I cut the brown sugar to 2 tbsp. and the honey to 1/4 c. Only toasted in the oven for about 45 minutes. Wasn't too sweet (mainly because I cut the sweetness myself) but it was perfect. Even my kids ate it right out of the oven by the fistful. Might try almonds - or whatever I have on hand next time. Maybe some dried fruit or flaked coconut too.

Southwestern Turkey Soup

WOW! This is perfect! A nice "kick" to leftover thanksgiving! I am not real fond of turkey soup... so this is a great change from the norm. Thanks! I didn't use avocado, but threw in a can of rinsed black beans! Served it with quasadillas.

Brown Sugar Meatloaf

My husband gave me the "thumb's-up" for this recipe! He is not a big meatloaf fan, but I think I have changed his mind! It was easy, and very moist and tasty. I think next time I might add a little garlic or garlic salt in place of the salt... otherwise, I wouldn't change a thing. If you don't like it so sweet, you could probably replace the brown sugar and ketchup for just about anything. Thanks for this great recipe!

Marinated Pork Roast

Absolutely FANTASTIC! Thanks so much... I guess what made it such a big hit with my husband, is that it was his first try at his new BBQ! Next time I might cut slits in the meat and slide slivers of Garlic into it before marinating. It also ended up marinating overnight... but didn't seem to be a problem. Great recipe! Thanks.

Broccoli and Stilton Soup

Fantastic and simple. You really have to be a fan of blue cheese to like this. I added a minced clove of garlic about 30 seconds before adding the vegetables. Don't forget to season with salt and pepper. When adding the cheese, I added a dash of red pepper flakes to give it a little bite. It was perfect. Must have some chewy, crusty bread to dip with. Fantastic! Thanks.

Easy Biscuit Mixture

I make this 1/2 batch at a time - once a week. We love this better than krusteaz pancake mix. Have only used it for pancakes and waffles so far, but it is by far the best! Pancakes 2 cups mix, 1 1/3 cups milk, 1 egg, dash of vanilla. Waffles, 2 cups mix, 1 1/4 cups milk, 2 eggs, 2 T oil & dash of vanilla. Perfect every time! Thanks. This is a staple ingredient in our house.
