Marvelous Mocha Mix

Made 1/2 a batch just to try. Will reduce the sugar and add a bit more coffee. Otherwise- great! UPDATE***My daughter is CRAZY over this! I use 1/2 cup each Coffee, chocolate milk mix, creamer & 1/8 cup Splenda (don't add the spices). She has it every morning!

Tropical Salad with Pineapple Vinaigrette

Fantastic! Like other reviews, I added a minced clove of garlic, about 1 tsp grated fresh ginger. I also added a pinch of red pepper flakes. I didn't have quite enough pineapple juice, so I added orange juice to make up for what I was lacking. It was perfect. We had it with Jerk pork chops and coconut rice. Mmmmm.

Rainbow Clown Cake

Big Hit! Our German Exchange student joined our family on her birthday... and this is the cake we decided to do for her American Birthday party. It was fun to make and fun to eat. We plan on making it again and again. Maybe with cupcakes next time.

Oh-So-Good Chicken

My kids went crazy over this. I did use a bit less salsa, a bit more cheese, and 1 cup of black beans. Crushed tortilla chips on top, and then more cheese. Absolutely perfect way to use up leftover chicken and rice. Would be great as a burrito filling.

Beef Stew VI

Excellent basic stew recipe. No need to be fancy and this fits the bill! I add about 1 cup red wine when I have it on hand. I also put in a whole sprig of fresh rosemary with the simmering meat - this puts it over the top! Just pull out the stem before serving. Yum. Pure comfort food.

Iced Coffee Syrup

Great, but definitely not strong enough for our taste even cutting the water to 1 3/4 c. Will cut water to 1 c. and increase the coffee next time. Will make again for sure - will be especially great this summer when we don't want something hot! Also - makes a great white russian with 3T syrup, 1/2c milk (or 1/2 & 1/2) and 2 oz vodka. Mix and pour on the rocks!

Grandmother's Buttermilk Cornbread

Best cornbread - hands down! Probably a stick of butter has something to do with that! :-) Did it as written - and wouldn't change a thing! This will be my cornbread recipe of choice from now on. Thanks!

World's Best Lasagna

Excellent! Made exactly as written other than only used 1 tsp salt instead of 1 tbsp. salt. Perfect. Oh - I also put it in two square 8x8 pans instead of 1 9x13. That way I have one in the freezer for another day.

Buttermilk Wheat Bread

Excellent bread. Loved the tang that the buttermilk gave it. I used 2 cups white flour and the rest whole wheat. I used the bread machine to make the dough, then put it in a loaf pan and baked for about 25 minutes @ 350º. The second loaf I made, I let it rise a second time, punched it down then put it in the loaf pan. I think it came out a little better.

Boiled Chicken

This is how I will cook my whole chickens from now on. I usually boil the bones after roasting a chicken, but this eliminates that step... and is much easier to clean up. I was a little afraid the breast meat might be dry, but it wasn't. Extremely economical and versatile way to prepare chicken for lots of dishes.

Basic Baked Spaghetti

Don't know why my family went so crazy over this - it was so easy, and pretty much straight from the pantry. Ended up putting in two small square pans which left me an extra for later in the week. Huge hit. Will be making spaghetti like this from now on. I personally like the traditional spaghetti- but when you can actually get your kids to eat something whole heartedly - go for it!

Sweet Dinner Rolls

These are perfect! I divided into 12 balls and put them in the freezer. On Christmas morning I took them out and let them rise. Put in a 350º oven for about 15-20 minutes. Heavenly!

Cake Mix Cookies IV

Tried several cake mix cookies and they never came out well. These are perfect! medium scoop - 4 min. rotate and 4 minutes more... perfect! Drizzle with glaze, dust with powdered sugar - or use small scoop and make little sandwich cookies! Doesn't get any easier!
