Paul's Pumpkin Bars

Absolutely fabulous ! :-) I also add just 1/4 tsp each of ground nutmeg and ground cloves...otherwise, everything is the same...other than I do sprinkle chopped walnuts on top of the frosting to 1/2 of the pan, because not all people like nuts or are allergic to them. And I always make it the day before I need to take it to any gathering, because it gets more moist as it sits, probably because of the oil in the bars and the frosting on top...it is just sooooooooooo gooooood...thanks, Paul !!! :-)

El Rancho Beer Dip

THIS is excellent !!! I do use the Hidden Valley Harvest Dill flavor, and add 1 cup of shredded cheddar cheese...and sometimes a bit more beer, cuz as it sets up, it gets thicker and you need a really sturdy cracker or pretzel to dip into it...just don't over do it...cuz you want that balanced dill/beer taste...it's SOOOOO YUMMY !!!!!!!! :-)

Oma's Rhubarb Cake

I have made this 3 times now and planning a 4th next week. Everyone I have shared this with, loves it !!! I did add cinnamon & nutmeg to the cake mixture & cinnamon to the topping, as others suggested...it is sooooooo easy and absolutely delicious !!! :-)

Sorta Salisbury Steak

Good basic recipe..but I also added spices to the dredging flour(as others have) then 2 tblsp of Kitchen Bouquet in the broth(makes it a darker broth/gravy) with a tblsp of liquid smoke, as well as an extra can of beef broth...then I divided a bag of frozen mixed veggies(peas, corn, carrots, beans), with the onion layers...YUMMO ! :-)

World's Best Potato Soup

Excellent !!! But one tip, do not waste your time frying all that bacon, only to put it in the soup and it gets all soggy again...UGH ! Buy 'real' bacon bits(not those fake Bac-O's kind) and thow them in/or on top, when you serve the soup. YUMMO !!!!!!!!! :-)

Peanut Butter Marshmallow Squares

These have been a favorite of my family for YEARS ! Yes, I put in nuts and coconut...again, just a personal preference. :-) And I definitely will try the rice krispie idea sometime soon. Also, I never use a double boiler, just a dutch oven pan on medium and keep stirring as the butter, peanut butter and butterscotch chips melt. I do have 1 tip...I let the melted mixture cool for a few minutes, then add the colored marshmallows and spread in a 9 X 13 pan and put it in the fridge immediately, otherwise the marshmallows melt too much...again, a personal preference. TOTALLY YUMMY !!!! :-)

Brown Sugar Meatloaf

Yummo ! :-) I have been making this meatloaf for years. But 2 things I do differently. 1, is that I carmelize the onions in a fry pan and then add them to the meatloaf mixture...more flavor. :-) And 2, (I learned this from Paula Dean from the Food Network)...put 2 to 3 slices of bread in the bottom of the pan to soak up the grease as it is cooking. And then just throw away the grease soaked bread after it is done cooking. Happy Eating ! :-)

Green Chicken Enchilada

This was great and easy and I took the mixing the shredded chicken with cream of chicken soup idea from Jeri Reed's ''Chicken Enchiladas V'' recipe...yummy ! :-) My boyfriend loves my cooking ! And yes he means it ! :-) LOL Thank goodness for this site for all sorts of great recipe ideas ! :-)

Dried Beef Ball

I also tried using Carl Buddig sliced Beef instead of the dried beef and that tamed down the saltiness. And some chopped pistaschios instead of walnuts. I like both versions very much. :-)
