Chutney Chicken Salad

Chocolate Frosting I

Roast Chicken with Rosemary

Excellent. I followed all the tips...a perfect roast chicken! However, I did have a 5 pound bird and was wondering how long to cook it. So I called a help line and they suggested 20 minutes per pound at 350 degrees. So I cant imagine cooking a 3 pound chicken for 2 and a half hours when mine took an hour and 20 minutes and was perfectly cooked...

Healthy Coconut Oatmeal

This was good, but nothing to write home about. I used 2% milk instead and dried blueberries instead of raisens. I love coconut, so that was great, but it needed to be punched up a bit. Maybe a dash of cinnamon and nutmeg next time.

Peanut Butter Oatmeal Cookies

these cookies were a hit. loved the unexpected compliment of the peanut butter and oatmeal together. I added some seasoned applesauce, used all butter, and also added craisens and dried blueberries and vanilla extract.

Red Pepper-Salmon Pasta

This is one of my husband's favorite dishes I have made for him. Its nice and light and a great balance of flavors. Good summer meal for a simple dinner party.

French Toast I

I never eat/make french toast but one morning I had a yen for it and made this recipe. It is so simple and it was just perfect. The whole family, even one year old baby devoured it. I added vanilla extract. I used some strange health bread we had and still was just delish! I went a little crazy "dunking" bread and the bread broke apart so beware there, and yes keep mixing batter to keep your spice ratio the same on each piece of bread you dunk.

Pasta, Broccoli and Chicken

I was in the mood for a dish with pasta, chicken, and broccoli without a heavy cream sauce and this did the trick. I am not s huge pesto fan, but it went well with this recipe. I agree to add more pesto- I also thought you could double the amount of broccoli and triple the amount of tomatoes. I added more veggies than required, but I still thought it could use more. I also used the "corkscew" pasta which I thought would go better.

Best of the Best Blueberry Muffins

Great - I used vanilla extract and went heavy on the blueberries- frozen berries which were fine. Didn't crush them either. Muffins great "strait" like cupcakes, but also how I like them- toasted with butter.
