Jo Jo's Favorite Banana Muffins

Very very yummy, light, and moist. Great taste! Would make again in lieu of banana bread. I used 3 bananas (more than 1c.), 1 tsp vanilla, and added a pinch each extra cinnamon and nutmeg, and 1/3c. chopped walnuts. 6 at a time in my Convection Toaster Oven and they only needed 15 mins (probably due to size of oven).

Roast Sticky Chicken-Rotisserie Style

Used one 3.5-lb chicken, decreased salt, added 1 tsp Chicken Seasoning and 1 tsp brown sugar. Rubbed olive oil all over the chicken before rubbing with spices. I placed 1/2 onion, 3 cloves garlic, and 1/2 lemon in the cavity of the chicken, and I only marinated for 4 hrs. Roasted mine for 3.5 hrs at 250 F. Good, and quite juicy, but not as flavorful as expected. Pretty close to store-bought rotiserrie, though. Would make again, but will continue tweaking.

Banana Banana Bread

I baked this in a glass loaf pan with a small handful of craisins/mixed dried berries, about 1/4-1/3 c. finely chopped walnuts, 1 tsp of vanilla, a pinch of nutmeg and about 1/4 tsp of cinnamon. It needed to get covered about halfway through the hour because the crust was dark, and we added about 5 minutes baking time before it came out clean. Also used margarine to make it non-dairy and a couple of heaping teaspoons of white sugar to sweeten up the bananas (they weren't yet *very* overripe). It came out dark crusted, but moist and light, not overly sweet. I might add additional spices next time as it still didn't have a lot of flavor and use really dark, black bananas. Overall, recommended as a great base recipe for yummy banana bread.

Restaurant-Style Coleslaw I

Used the recipe as a starter, but wanted non-dairy so substituted just less than 1 cup mayonaise, omitted the milk and sour cream, and minced fresh onions instead of prepackaged. I also used 1 tbsp white vinegar and a few splashes of white cooking wine instead of white wine vinegar. I found it very sweet to the taste, so if you are not fond of overly sweet slaw, either decrease sugar to 3 tbsp or add extra lemon and vinegar. Overall a very good recipe!
