Sour Cream Cranberry Jell-O® Salad

I made this for a luncheon following a memorial service at church. Everyone loved it and it was so easy to make. I did add a small can of drained pineapple to it but it would be just as good without. It's sweet and tart at the same time. It's one I will continue to make!

Portobello Mushroom Pitas

I made these for dinner tonight and they were very good and easy to make! I made 3 small changes. First, my husband bought portobello slices instead of the caps so I used those. Second, instead of grilling them I fryed them in a frying pan with non stick spray. And third, I added ripe avacado slices to the sandwich. This is something I will make again! The best part, no leftovers!!

Cantonese Dinner

I doubled the sauce like others suggested and served it with rice. My family really enjoyed it and my kids ate all the leftovers the next day. I'll be making this one again!

Wonderful Banana Cake

I spent the day before I made this making 252 banana muffins. My husband had brought home a whole case of bananas so I had to do something with them. My teenage daughter made this cake the next day with the few leftover bananas we had. We also used the banana pudding/whipped cream frosting someone here had suggested. It turned out very good!!!

Chicken and Pea Casserole

I had to make these changes because of what I had on hand. I used a pint size jar of home canned chicken chunks for the chicken. I had no onion powder so I used some chopped frozen onions I had in the freezer. I also had no frozen peas so I used frozen mixed veggies. I don't think the changes I had to make would have made a huge difference in the taste. I thought it was a little strong on the garlic and very dry. It needed more sauce. No one really liked it because it was dry. I'll try it again but add another can of mushroom soup and some more sour cream to it. It was easy to make and on a busy day that was a plus!

Authentic Hungarian Goulash

First I have to say I didn't have any caraway seeds or marjoram. I thought I did when I started this recipe but found I didn't. Instead I added a hearty helping of Mrs. Dash. I cut the meat into bite size pieces and it cooked faster that way. I had to watch because I did need to add more water as it cooked. I have a family of 8. Some liked it just the way it was, some added a dallop of sour cream to theirs, and one, my youngest added sour cream and salsa and declared it a keeper! Strange child!

Spam Burgers

These were ok, but not great. My husband ate them and said they were ok, but my 6 kids ages 11 to 18 only ate a bite or two and headed for the peanut butter. I think the onion was too much and when I broiled them they burned before the bacon could cook. If I ever make them again I'll cut down on the onion and fry the bacon seperately so I don't have to broil the sandwiches for as long. I don't think I'll ever be able to convince my kids to try them again though. Perhaps if they didn't know it was spam?

Pumpkin Chocolate Chip Muffins

Since we are a family of 8 and I'm watching two of my grandsons today, I tripled this recipe. I didn't have any cloves so added some allspice instead. I also didn't add as much nutmeg and threw in an extra handful of chocolate chips. I used milk chocolate chips. They turned out great!! Even the kids love them. They are a keeper!!

Banana Bread IV

My husband brought home a case of over ripe bananas from the fruit market that he paid $2 for so I made this bread for my daughters baptism. Everyone loved it and it was easy to make. I'll be making more to use up all of those bananas!!

Cafeteria Macaroni and Cheese

This isn't very creamy, but it is cheesy which makes it a hit with my family! It's a hit with me because it's so easy. I don't have to stand there and stir a white sauce forever and for me that makes it great!!

Amish White Bread

I doubled this and used my Magic Mill DLX mixer. It is like a Bosch mixer. It was so easy to make my 12year old daughter helped out. Turned out great!

Pineapple Fried Rice

My husband and I thought this was OK, but my picky "if it's not a hotdog I don't want it" kids complained. I added a can of sliced waterchestnuts and sliced bamboo shoots. Next time I'll also add celery and other veggies I have on hand.
