Eggplant Parmesan II

The only thing i did different from the recipe was i salted the eggplant and let the water come out, and i baked it for 10 minutes per side. This turned out great! Even my wife who wasn't that excited about eggplant said she liked it! Definetly will have to make again, i think next time i'll experiment and a layer of cottage cheese and spinach like in a lasagne.

Slow Cooker Salisbury Steak

I made it exactly as described, i just couldnt find au jus so i used powdered gravy and it turned out amazing...definetly making again. Great recipe thanks!

Spinach Pancakes

Turned out pretty good. Took the advice of others that it was a little bland. So i added garlic powder, cayenne, and a lot of cumin jsut cause i love it. I didn't have any flour either so i used bread crumbs. Came out great, definetly going to make again so i can experiment some more :) Great way to use frozen spinach.

Homemade Black Bean Veggie Burgers

Wow!! Not that this recipe needs more rave reviews, but i had to post. These were the best veggie burgers i've ever made. I've tried making similar ones before and they always fell apart...these turned out amazing. Took previous posters hints and dried beans thoroughly and removed as much liquid from the food processed onion/pepper mix as i could and i really think that helped. Definetly will make again. Thanks for the great recipe :)

Campbell's® Tuna Noodle Casserole

This recipe is awesome! I only added some garlic powder and dried chili flakes....just cause everythign to me is better with garlic and some heat. I'm glad i doubled the recipe i'm gonna pack in my lunch all weekend long :P yummo
