I'm finishing up my last year of nursing, and kept busy being a single dad to my two toddlers! Love the outdoors, and having fun with friends. Cooking with friends is always great too :D

I love cooking meals inspired by different cultures. I like to play with recipes and put an asian, mexican or greek twist to them especially.

I love sugar pie on holidays...just wouldnt be the same without.
My cooking triumphs
I've recently lost alot of weight so i like finding low fat healthy recipes on here to try out. Or taking recipes and just cutting down on the fat and adding healthy herbs or seasonings to give it a boost!
My cooking tragedies
Oh there have been many lol...i like to experiment so they don't always turn out. But i'm getting better...its all trial and error sometimes.

Campbell's(R) Tuna Noodle Casserole
This recipe is awesome! I only added some garlic powder and dried chili flakes....just cause everythign to me is better with garlic and some heat. I'm glad i doubled the recipe i'm gonna pack in my lunch all weekend long :P yummo

Homemade Black Bean Veggie Burgers
Wow!! Not that this recipe needs more rave reviews, but i had to post. These were the best veggie burgers i've ever made. I've tried making similar ones before and they always fell apart...these turned out amazing. Took previous posters hints and dried beans thoroughly and removed as much liquid from the food processed onion/pepper mix as i could and i really think that helped. Definetly will make again. Thanks for the great recipe :)

Spinach Pancakes
Turned out pretty good. Took the advice of others that it was a little bland. So i added garlic powder, cayenne, and a lot of cumin jsut cause i love it. I didn't have any flour either so i used bread crumbs. Came out great, definetly going to make again so i can experiment some more :) Great way to use frozen spinach.
