Rempel Family Meatloaf

Reviewed: Feb. 3, 2008
The most delicious meatloaf I've ever had. I used ground turkey instead of beef and made slight changes to the amount of ingredient since I only had 1.25 pounds of meat. The only change I would possibly make is to add some fresh onion. DELICOUS!!!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Dec. 30, 2007
I've made this twice now and love it everytime. The second time, I didn't add enough chicken broth (Cooked outside of the turkey) and the bread was a bit dry. I made this the day before. Used Granny smith apple, and Jimmy dean Sage sausage as suggested. I also used fresh herbs the second time around and it was more flavorful than the first time when I used dried. I used potato and sourdough bread the first time which was perfect. I used french bread and potato the second time and prefer the sourdough over the french. I drizzled it with butter before refridgerating and then let the mixture come to room temperature before baking for 30 minutes the next day. 1/2-3/4 of the can of chicken broth would get it moist enough for me next time, but that is personal preference.

Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 30, 2007
Not for my taste. I didn't care for the consistency. I suppose we prefer the breaded kind. They were just okay. I wouldn't make again.

Double Tomato Bruschetta

Reviewed: Dec. 30, 2007
Best Bruschetta I have tasted. Came out perfect and was absolutely delish. Better than the restaurants I have tasted. I put a bit of olive oil on the bread before broiling the first time. Otherwise, didn't change or add a thing.

Green Bean and Portobello Mushroom Casserole

Reviewed: Dec. 30, 2007
Not as good as I hoped. I don't think the flavors meshed well together for me. Was not a hit at my christmas dinner.

Baked Sesame Chicken

Reviewed: Nov. 2, 2007
Wasn't thrilled with this. I would have cut the cooking time back, this came out very dry. It needs some spices to give it more flavor. It was very bland.

Spinach Lasagna III

Reviewed: Nov. 2, 2007
My first lasagna and it was so good! I was really surprised, I thought it would be a disaster. Easy enough to make (Although I guess you don't have to cook the lasagna noodles. Add more sauce to saturate). I would definately make this again. Maybe more spinich next time.

Pumpkin Cream Cheese Muffins

Reviewed: Nov. 1, 2007
Nice recipe. Wish it had more pumpkin flavor. And it was a bit too much cinammon for my taste.

Fra Diavolo Sauce With Pasta

Reviewed: Oct. 26, 2007
Great recipe. Definately start out with less red pepper and add to your taste. This can get very spicy and you want to make sure you can tolerate it and enjoy it! My husband loves this.

Actually Delicious Turkey Burgers

Reviewed: Oct. 26, 2007
Nice simple recipe. I would put this on the grill instead of frying pan next time to make it a healthier dish.

Souvlaki

Reviewed: Oct. 26, 2007
Very nice recipe. I threw this on my George Forman grill and the pork came out very tender and juicy. I feel like it could use something more, but I don't know what. I would try this again with some sort of sauce.

Pollo Fajitas

I wasn't terribly impressed by this. I didn't get much flavor and it turned out quite watery.

Chewy Brownie Cookies

Reviewed: Aug. 30, 2007
These didn't taste like the gooey chewy brownie that I hoped for. It was just a chocolately chocolate chocolate cookie. It was okay.

Strawberry Shortcake

Reviewed: Aug. 10, 2007
This came out absolutely perfect. It wasn't too dry or too moist. Perfect for my taste. I also used 1/2 cup of butter instead of shortening, 2tsp. of baking powder and 1/4 cup of sugar for the shortcake mix. I did use 2 pounds of strawberries and would have used more. I like it to have alot. Also, more whip cream would have been good too.

Guacamole

Reviewed: Aug. 3, 2007
I've made this twice and always get complements on it. The first time was very oniony tasting, so I reduced that and it was perfect. I especially like the cayenne pepper flavoring. Really boosts the taste.

Bacon and Tomato Cups

Reviewed: Aug. 3, 2007
This was a quick easy recipe. The taste of mayonaisse was too strong for my taste. So, I will definately cut back on it next time. I also used whatever shredded cheese I had in the fridge and it tasted fine. I don't have a mini muffin tin, so I used the whole size biscuit (I used Stop and Shop Buttermilk biscuits which are small) and made 12 with the entire mixture.

Firecracker Grilled Alaska Salmon

Reviewed: Aug. 3, 2007
Absolutely delectable. The marinade was just delicious. It was incredibly easy to make and din't require any ingredients that I had to make a special trip for. I don't have an outdoor grill, but used my indoor George Foreman. I kept my eye on it since I like mine rare and my husband likes it medium.

Puppy Chow

This was a hit at a recent party I had. We couldn't stop munching on it. It had a perfect amount of chocolate/peanut mixture for my taste. I would change anything.
