My favorite things to cook
Casseroles, (given my title Queen of the Casserole), pasta, baked goods, candy and other desserts.
My favorite family cooking traditions
My family always centered holidays around the dinner table. We looked forward to preparing Thanksgiving and Christmas meals. There were always the standard requirements but we always would try something new. Growing up in Texas, Thanksgiving revolved around the Dallas Cowboy game. Food had to be ready before or after, never during! Our standard fare for Thanksgiving were Turkey, Dressing (never stuffing) Green Bean Bake, Cheesy Hashbrowns, Mashed Potatoes and Gravy. My mother always had to have the English Peas in White Sauce and the proverbial canned Cranberry Sauce that looked like it was-from a can! I was only to happy to omit these two from my table as I became an adult! Christmas was the same with the addition of a Spiral Ham. We always prepared a relish and veggie tray for munchies before dinnertime. One of the funnest parts was Mom and I deciding upon what desserts to bake. We would decide on a new one but always ended up making the others anyway with 5+ pies and cakes!!
My cooking triumphs
My last triumph was making my grandson Noah's 4th birthday cake. Disney's Cars Lightening McQueen! ( An other triumph would be learning to cook vegan. My husband and family grew up vegetarian so I had to learn. It is difficult at first but once you get the substitutes down you can make some pretty good stuff. Although there is a dish I don't care for but everyone else in the family does is the Special K Loaf...yes, that is correct...Meatloaf made of Special K. Bland in and of itself but I added improvements and they seemed to like it. It is vegetarian but not vegan(will post this too for those who want to try it!)
My cooking tragedies
I'm sure too many to mention. Some that come to mind, cooking a turkey in brown bag that stuck to the bird, plopping a steak on the grill and cooking only to discover when turning that the plastic white pad in the packaging was stuck to the bottom! =->

Refried Beans Without the Refry
Was concerned they would not be tender enough but at exactly 8 hours they were perfectly cooked. I made for kids and grandchildren (vegan) for burritos and we devoured them all in no time! We will be making these often. Highly recommend this recipe.
