Zucchini Patties
This is now our accompaniment to meatballs instead of pasta! I used several modifications to fit our needs: 1) Used almost 2x amount of zucchini, salted for 15 min. and then squeezed dry 2) add 2 cloves minced garlic and some minced parseley, and pepper 3) used shredded gouda (because I had that on hand) They are a bit "goopy" to handle at first, but I formed the patties and put them in the freezer for 10-15 min to firm them up. Turned out fabulous with no leftovers. Delicious with marinara.

Creamy Italian Dressing I
This turned out fabulous. Make sure you follow Cathy's advice (the first comment) re: onions. I used 1/2 C. chopped sweet onion and it turned out perfectly - not bitter or overly sharp. In fact, my onion was so sweet that I didn't need the sugar and had to add a little lemon juice to cut it . . . So make sure you taste it before sweetening. Otherwise followed recipe exactly, using homemade mayo instead of store-bought. My husband says this is the best dressing ever and it really livens up a dinnertime salad (especially if used on dark greens with red/orange peppers). Also makes a very good veggie dip!

Herb Rubbed Sirloin Tip Roast
This is the first time I have felt so strongly about a recipe that I HAD to review it! I can't even tell you how great this came out. I followed this recipe almost exactly (I halved the amount of cayenne because I am a lightweight). My husband couldn't stop talking about how great this marinade was and he wanted to "make sure you can replicate this." The cooking time was very accurate for a 3 lb roast also - I used a buffalo sirloin tip roast and after 1 hour it was PERFECTLY medium rare (about 130 deg. when I took it out to rest). All in all, FANTASTIC. Thank you, Joel!
