Cake Mixes from Scratch and Variations

I made the yellow cake variation of this recipe for the "Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever." recipe, and I bumped the milk up to 1 and a 1/2 cups, just cause it seemed too small of an amount compared to how much milk/oil I usually have to add to other cakes that I make. I baked my cupcakes for 16-18 minutes and they were AMAZING!!! Definitely a keeper. Oh, and I also used cake flour instead of all purpose.

Peanut Candy Bar Cake

I've made other desserts like this that turned out with a hard crust, but this turned out soooo soft. Be careful when pouring the topping mixture over the marshmallows, or you might cave in the middle. I had marshmallows coming up the sides of the pan, so next time when I pour on the topping, I'll do it slowly and in spoonfuls along the edges first then work my way in. Also! The bag of peanut butter chips wasn't enough, so I added peanut butter to that mixture and a little more corn syrup too.

Soft Chocolate Chip Cookies II

I make one change every time I make these and that's to use oil for the "shortening", but I only use about 1/8th cup and I just use more margarine/butter than it says. These are extremely soft cookies. I like the award winning soft cookie recipe on this site, but I find that this one has more of a "homey" taste, rather than a bakery taste, and I loooove homemade cookies taste, so it's good! I've also doubled, tripled, and quadrupled this recipe with no problems!

Soft Whole Wheat Sugar Cookies

I used demerara sugar instead of white and used cinnamon and nutmeg, more cinnamon than nutmeg though, and the cookies turned out great! I think brown sugars should definitely be used over white; they give a different flavour.

Fudge Brownies I

I used 3 eggs instead of 4, then doubled the recipe and put in a 9x13 pan. AMAZING!!! So dense and fudgy. Will definitely be making again!!!

Poutine

I LOVE poutine, and it just isn't the same with frozen french fries and canned gravy. I do my poutine like this sometimes, if I'm just looking to spend a few bucks at the grocery store, but nothing compares to homemade fries with homemade gravy and cheese curds! EDIT: something that would make this taste better is if you deep fry the frozen french fries according to the package directions, instead of baking.

Apple-Cranberry Crisp

Loved this. I don't think I'll ever make apple crisp without cranberries again! I usually double the recipe and use a 9x13 pan, and have it with ice cream.

Sugar Cookie Icing

Followed the recipe pretty closely, just added a bit more milk to get the consistency I needed. hardened to a fantastic glossy icing! Will definitely use this again anytime I make sugar cookies!!

Nanaimo Bars III

Soooo good. I doubled the recipe and put into a 9x13 pan. I used custard powder but next time I think I might just use vanilla pudding mix. I lined the pan with parchment so I could take it out a little easier. Cuts really well and absolutely delicious!!

Ultimate Frozen Strawberry Margarita

I used frozen raspberries instead because my friend doesn't like strawberries. Kept everything else the same; these were phenomenal!! Strong, but yummy enough to hide it :)

Mom's Zucchini Bread

I doubled the recipe...made 2 loaves and 48 mini loaves. I used half brown sugar, half white, cut it down to 2 cups (doubled) each. Next time I'd cut the sugar down even more, they're very sweet! Love the recipe though, tasted amazing!! I might double the zucchini next time as well.

Award Winning Soft Chocolate Chip Cookies

LOVED these! Definitely has a sort of bakery taste and softness to them. These stayed soft for at least a week (that's how long they lasted-I made about 2 batches =D) I added extra vanilla and a little bit of baking powder like one reviewer suggested. EDIT: Made these again, and after I added the chocolate chips, I added maybe one more cup of flour, to make the dough more easy to work with. Also, I noticed something. These taste exactly like the "chewy" chips ahoy cookies!! Which is awesome, because I love those, and now I won't have to buy them again =D

Chocolate Chip Muffins

The first time I made these, they turned out great! I didn't follow any of the reviews, just followed the recipe exactly. Second time, I added the 1/4 cup of milk, and put the crumb mixture on half and left it off half, just cause I like seeing my muffins- not a fan of crumb toppings, although I do think they taste okay, and in this case, makes the tops have more colour. Next time I make, I'm going to cream the sugars with the butter, egg, and vanilla and sift the dry ingredients together to see if it changes the texture at all.
