Classic Bran Muffins

Reviewed: Nov. 25, 2008
I used applesauce instead of oil, and I didn't have buttermilk so I added 1tbsp of vinegar to my fat free soy milk that I had on hand. I did half and half all purpose and whole wheat flour. Didn't add raisins, cause I don't like them. They turned out good!

Chicken Breasts with Herb Basting Sauce

Reviewed: Nov. 19, 2008
Followed the recipe pretty much, added a bit more of each spice to it, because I had 4 very huge chicken breasts. Added chopped up potatoes to the dish too before putting into the oven. Tasted good! Definitely a very good herb blend.

Made with 3/4c of butter. Turned out great! And I found them a lot easier to cut while still cold.

Peanut Butter Bars I

Reviewed: Nov. 11, 2008
I followed the recipe exactly the first time, and I love these! I make them all the time now. One change I make sometimes is to lower the amount of icing sugar, and up the graham cracker crumbs, just because sometimes I find the base toooo sweet. But I don't do that all the time.

Followed the recipe exactly, except for using mini peanut butter cups cut into 4 pieces. Baked for 8 minutes, came out perfectly soft and chewy!

Black Bottom Cupcakes I

Reviewed: Oct. 17, 2008
I can see why it says to only fill muffin cups 1/3 full. I filled mine about 1/2 full and then put a big dollop of cream cheese mixture and they're very big. Which isn't bad! But this recipe definitely could make 24 nicely sized cupcakes, rather than the 18 big ones I made. Batter seemed a bit..stiff and hard to work with so I added about 1/4 cup extra milk. made it a bit more easy to get it off the spoon and into the muffin liners. I had no problem with my cream cheese mixture being runny. Considering the batter is somewhat thick, I'm curious as to how it would turn out with a cake mix, or a regular cake batter.

Poutine

Reviewed: Oct. 15, 2008
I LOVE poutine, and it just isn't the same with frozen french fries and canned gravy. I do my poutine like this sometimes, if I'm just looking to spend a few bucks at the grocery store, but nothing compares to homemade fries with homemade gravy and cheese curds! EDIT: something that would make this taste better is if you deep fry the frozen french fries according to the package directions, instead of baking.

Brown Family's Favorite Pumpkin Pie

Reviewed: Oct. 13, 2008
YUM. I made 2 pies out of it with frozen pie shells, and the topping made it go pretty much to the crust. Next time though, I'll make a deep dish pie crust and just fill it up, and maybe put topping on one half of it, just because although it was yummy, I do enjoy just the pumpkin, without any added stuff. Will definitely use this pumpkin pie recipe from now on!

Butter Cream Frosting II

Reviewed: Oct. 13, 2008
I use this recipe whenever I need to make big batches of icing (basically whenever I make a castle cake for my niece's birthday) and I usually end up adding a bit more milk or icing sugar to get my desired consistency. Great recipe for frosting cakes, and adding little decorations to! Holds in place very nicely. I make mine with all margarine sometimes, or half and half margarine and shortening. Either tastes great!

Sour Cream Apple Pie Deluxe

Reviewed: Oct. 13, 2008
Love this recipe! I always double it so I can use the whole container of sour cream, plus every one always finished one so fast! I cut out 1/3 cup of sugar though. And the "15 minutes to brown" always takes a little bit longer for me - maybe 5 more minutes. Love the streusel topping sooo much. I was looking for a pie that used streusel because I always find double crusts so filling. Ever since I found this recipe a few years ago, every one always asks for it!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Reviewed: Oct. 12, 2008
This was sooooo good! The sauce was a little thin, but it kinda latched onto the pasta and made it really cheesy! I doubled the recipe. So good!!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Sep. 25, 2008
Soooo yummy! I refrigerated the dough after making. Baked my batches for 17-20 minutes, might try the 15 next time and take them out whether they look done or not, just so they stay super soft. EDIT: I'll definitely only bake these for 15 minutes next time. They became a bit hard in a couple of days, definitely baked them too long. Softened up a bit in the microwave though.EDIT: Made these again, refrigerated the dough for an hour, baked some for 15, some for 17 minutes, turned out soooooo soft!!

Firecracker Grilled Alaska Salmon

Reviewed: Sep. 23, 2008
Sooooooo good. I didn't have peanut oil so I used a little canola and I skimmed the oil off the top of my organic peanut butter, and it tasted great! I baked it at 400 for 20 minutes. Perfect! Thanks for a great recipe!!!

Nacho Cheese Sauce

Reviewed: Sep. 22, 2008
I think I didn't add enough salt, and maybe I'd add more cheese slices next time, just for personal taste. Definitely a very good recipe!! Can't wait to try it with jalapeno peppers to make it spicy! Also, I didn't use it all. It congeals a lot, but if you want to use again, just re-heat. Or! Use it as a cheese spread. This is also good for any recipe that calls for cheez whiz or something. Would work great if you're making chili fries!

Baked Chicken Nuggets

Reviewed: Sep. 22, 2008
Oh my gosh, so delicious!!! I didn't have Italian seasoned bread crumbs so I used regular, and added about 2 teaspoons of Italian seasoning to it. Other than that, followed the recipe perfectly. Turned out great!!! They're very good as is, or with a dipping sauce. Will definitely be making this again!!
