Roasted Roma Tomatoes and Garlic

I was very liberal with the olive oil. AFter roasting, I cooled them then pureed them in the food processor. Added some more fresh italian herbs from the garden and tossed it over pasta!

Dutch Oven Mountain Man Breakfast

Ok made 2 of these for my son and 12 frat bros! Made one with Sausage as written...was ok...needs hot or seasoned sausage. Mild sausage gets lost in the mix. Made another one with bacon (chopped the cooked) and they finished it off. It was definitely the better of the 2. I was at home so baked them in 13x9 pans in 350 oven for about 40 mins.

This is good but try it with Olive Oil instead of the butter! Makes ya think your at the state fair eating roasted corn!

Brownie Chocolate Chip Cheesecake

Very good!!! I used the Ghiradelli triple chocolate brownie mix. I topped it with sweetened whipped cream with a Ghiradelli Bittersweet ganache on top! I tossed my chocolate chips in flour but they still sank. I think that since I used the above mentioned brownie mix (that contains chips) I won't add them the next time!

Green Beans with Almonds and Caramelized Shallots

I loved this!!! I did cut back on the sugar though to about 1 tbsp. Didn't have slivered almonds but sliced and didn't have red bell pepper but green. A keeper recipe!!!

Cream Cheese Pound Cake

I added a tsp of vanilla since there was none in the recipe. It has a great flavor but was rather dry, needs some type of sauce or liquid ( macerated fruit) to soak into it. Am going to try to slice a piece, grill it then put some type of ice cream on top

Spinach and Bacon Chicken

this was really pretty good!!! I used italian breadcrumbs instead of flour. Did add a little bit of EVOO to the bacon grease. I'm thinking next time I'll add some sun dried tomatoes.

Creamy Pimento Cheese

I loved this!!!! I love the base spread, it's a great recipe. I then added Rajun Cajun Jalapeno Relish to it...OMG! I did use fresh pimento as my plant is going nuts producing them. Thank you for sharing this!!!

Sweet 'n' Spicy Roasted Corn

I like the list of ingredients. But next time I will not melt the butter and just combine the ingredients in softened butter. Therefore making a spread-on instead of liquid butter. The ingredients separate from the melted butter. Love the flavor though!!!

Strawberry Torte

I LOVE THIS RECIPE! I did make some changes as per previous reviews. I cooked down the frozen strawberries with the cornstarch for a few minutes until heated, then stirred in 1/4 cup of the total sugar measurement. I let that cool to room temp then pureed and strained the juice out, reserving the pulp. In the cream cheese mixture I added 1/2 tsp almond extract. I layered as follows: Lady Fingers (my packages were 3 oz each, I used 2 1/2 packages), cream cheese mixture, strawberry pulp, ladyfingers, cream cheese mix, strawberry sauce. Topped with leftover cream cheese mix piped onto the top. I did have strawberry sauce and cream cheese mixture leftover.

Bacon for the Family or a Crowd

Great idea!!! Will have bacon more often! Placed it on a foil lined broiler pan, so clean up was REALLY a breeze. I did sprinkle mine with some brown sugar prior and turned it after awhile in the oven. I can't remember how long it cooked as I just eye-balled it but it did take much longer than 10-15 minutes and it wasn't thick bacon, but good ole Oscar Mayer bacon!

Black-Eyed Pea Chowder

This is very good. I made it as written only adding a second can of peas, some cooked rice at the end and 1 tsp of Creole seasoning. Going to let it sit overnight and then have it for tomorrow's lunch topped with the bacon and maybe even some sliced green onions on top and some corn muffins.

Praline Pecans

I made a test batch of these this afternoon. Soooo addictive! I made 1/4 of the recipe. Don't have a candy thermometer so I did the soft ball in water test. All that being said. I have to get a candy thermometer as I may have taken the candy to a little higher temp. Secondly my pecans had been in the fridge, but I thought out long enough...guess not, as the "goop" set up too fast after putting in the nuts. Next time I will toast the nuts and then cool to room temp just to give them a little more flavor. The aroma when the rum extract hit the warm candy mixture...wow! Cooled them on the Silpat. Maybe next time I may add a little "heat" to them, just a little something to get your attention but not burn.

Orange Cranberry Biscotti

I made the recipe as is using grand Marnier. Next time I will add more cranberries and more orange zest/GM/or orange extract for a little more flavor. They are a bit more crumbly than alot of biscotti recipes I've made. The dough is more tacky than other recipes as well. I would suggest chilling the dough for about 30 mins before attempting to roll into logs. I added additional flour but it was still a battle having not chilled it, which I knew I should have. Use parchment or a Silpat under the logs to ease in removal from the pan. Also, bake in convection if you have that option (for both baking times). I topped mine with melted Ghiradelli White Chocolate after done.
