Cold Oven Pound Cake

I use all butter in this and like to add a little mace. But this is hand down my mom and son's favorite cake. If made in a tube pan, it makes a gorgeous crunchy crust. My mother got this recipe at work many years ago and made it all through my childhood. I have a picky little Papillion pup who isn't a foodie at all, she doesn't even like most dog treats. But when she smells this cake she always wants a bit of it. I do find that I need to bake it about 10 minutes longer than the time in this recipe.

Mini Meatloaves

I made some changes to this because of what I had on hand, and it turned out fantastic. I used seasoned bread crumbs instead of oats, and I added some garlic powder, onion powder and black pepper to the meat mixture. I also added a strip of uncooked bacon on top of each meat loaf prior to adding the sauce. I think the bacon really adds something special to this dish.

Mom's Apple Fritters

My children loved these. I thought it was good as written. I added some cinnamon and a little extra sugar to the batter as well as some nutmeg and a little mace, which I think added just the right amount of spice.

Fruit Cobbler

This is a wonderful recipe. It adapts well to other kinds of fruit, as well. The crust is crunchy and lovely where the butter has been around the edges. I highly recommend it.

End of the Line Ham Casserole

I used leftover mashed potatoes (because that's what I had) instead of sliced, and I sauteed the onion in a little butter before putting this all together. I also added some cheddar cheese on top. It was simple and very good. My little ones really liked it, as well as my husband.

Vegetable Beef Minestrone

I thought this soup was very easy to make and delicious. It does end up thick if you follow the recipe. If you don't like it thick, just use more broth. I used navy beans instead of chick peas, and ditali instead of spagetti. It turned out very flavorful.
