Roasted Herb Chicken and Potatoes

Fantastic and easy recipe. As others have said, I used the pan drippings to make some of the move amazing gravy I have ever had. I used a hand blender to mash the potatoes and onions for fantastic mashed potatoes as well. The only thing I did differently was to add a bit of red wine to the pan to keep everything moist. Will most certainly make it again!

Holiday Cranberry Sauce

I love this. I've been making it every single year for thanksgiving and christmas for the past 3 years. It is a total hit! I also save the cranberry "water" once i drain the cranberries to help add flavor to the next years batch! It says to put it in the fridge for 8 hours or more, but I always cook it day of. This sauce is almost better warm, and will have more chunky cranberries. So good!

Cheddar Chicken

FANTASTIC! Oh i loved this chicken so much! I used the butter, but put 2 garlic cloves in it while it was simmering to add some extra flavor. I also used saltines since i had no cornflakes, but it turned out fabulous. 10 minutes before it was done, i sprinkled more cheese on top. Made a crispy cheesey top layer, which was so good. I am making this again for my dad in a few days because he loved it so much!

Scallop and Prosciutto Bites

My mom and dad loved this, liked the sweet vs. salty, but i didn't like it at all. I didn't use any wine, but followed everthing else. I found for me that the prosciutto overpowered the taste of the scallops.

Chicken Breasts with Herb Basting Sauce

This was great, and the chicken was so tender and juicy. the only thing i would suggest would to maybe grind up the herb sauce before putting it on the chicken... if your ingredients are already ground. That way it doesn't have the texture of eating grass

Kartoshnik with Cheese and Onions

This was a great recipe, thought i thought it was a little bland. I added extra cheeese on top, but i think it could have more cheese in the recipe as well. Depends on how much you like cheese. But with all the toppings, it was very good. A good twist might be to add some garlic to the mix :)
