Raspberry Vinaigrette

This was a nice, low-fat dressing. I left out the sugar and put everything in the blender (no need to sieve for seeds). After tasting, I added a bit more oil and vinegar, probably 1tbsp olive oil and 1 1/2 tbsp cider vinegar in total.

Dannon Tropical Berry Smoothie

I make this smoothie often. I use water in place of orange juice and freeze my fruit slices so I don't have to use ice. It makes 2 generous servings, not 1.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I wanted to love these, but they were just OK to me. The texture was good and I will definitely make them again, but use a fruit other than strawberry. The strawberries just didn't hold up well in muffins.

Mushroom Rice

This is a great, basic rice recipe. I use 2-3x the amount of mushrooms and base the amount of chicken stock on the type of rice I'm using. Add pepper while cooking the mushrooms, but wait to add the salt until the rice is done cooking.

Health Nut Blueberry Muffins

Delicious, moist, healthy muffins. I didn't have wheat germ, so I substituted equal parts oat bran/oats. I'm not a big fan of bananas, but the mashed banana gives the muffins sweetness with just a hint of banana flavor, and is not at all overpowering. I used frozen blueberries, which added a few minutes to the cooking time.

Addictive Pumpkin Muffins

Delicious, moist muffins full of fall spices. I added only 2 cups of sugar, used 1/2 whole wheat flour and left out the raisins. These have a very strong clove flavor, which I love, but if you're not a big fan, you'll want to use less in your recipe.

Buttermilk Scones

I made the recipe as directed, adding lemon zest and poppy seeds. These are more like American bicuits than scones. Plain scones are generally bland, so that was to be expected, but the density and texture was not right. I don't think I'll be making these again.

Buttermilk Wheat Bread

I've made this bread several times and really like the texture and flavor. The recipe is a tad too big for my machine - the top overflows and is undone. I'll get around to experimenting with yeast and flour amounts one day, but until then, I just cut off the top and enjoy the rest of the loaf!

Angel Hair Pasta with Garlic Shrimp and Broccoli

Just had this for dinner and it was very good. I simplfied the instructions by cooking the shrimp first, removing them from the heat, then cooking the sauce in the same pan. One less pan to clean is always a good thing!

Roasted Butternut Squash Soup with Apples and Bacon

This soup is perfect for cold days. It has just the right balance of sweetness and the curry powder gives it a subtle spiciness. I prefer it without the bacon and sour cream.

Jam Filled Butter Cookies

I followed the recipe exactly and used apricot, strawberry, and raspberry preserves. I only got 24 cookies, despite making the balls 1" thick. The cookies were very soft when taking them out of the oven, but firmed up as the cooled and were very good.

Boston Baked Beans

This is a fantastic recipe! The only reason I'm not giving it 5 stars is because mine were a bit too watery. I had to raise the oven temperature at the end and cook them for 10-15 mins longer to get them to the right consistency. The taste was perfect!

Brownie Snack Cake

These were delicious! I forgot to add brown sugar and they still turned out great. I used a 9" pie pan and cooked them just until the top was set (12-15 mins). They were moist and very chocolatey, yum!
