Chicken Jambalaya I

Me and my husband enjoyed this meal. He doesn't normally like Jambalaya, but he liked this. I substituted red pepper for green pepper, and added a lot more of the vegetables. A 1/3 and 1/4 a cup didn't seem like enough. I also cooked my rice seperatly instead of cooking it in the skillet. Decreased the amount of chicken broth accordingly. Overall a good meal, and will probably make again.

Taco Casserole

This recipe was ok. We call it Taco Goulash at our house. I would make this recipe again in a pinch, since most of the ingrediants I usually have in the pantry. I didn't seem to have any problems with it being too dry, and I did not use the chips on top. It makes quite a bit for just two people, and chips to not heat back up well.

Grilled Chicken Breasts with Zesty Peanut Sauce

This makes the BEST marinated chicken I have ever had. I will be using the marinade recipe a lot more in the future. However, I will NOT be making the sauce. It was terrible. I also had problems with the peanut butter seperating about halfway through the cooking time. So I lowered the temp. and whisked in the cream and broth, and it set back up again. But it tasted awful. If I were to advise anyone making it, I would definetly tell them to cut back on the lime juice, it was way too overpowering. But the marinade ROCKS!!!!!!!!!!!

Chicken Catch a Cola

My family didn't really care for this recipe. It is very sweet first of all. And the mushrooms take on a very strange taste. Also, the recipe says to put the chicken back into the sauce after it is finished cooking, and we found that the chicken just got way too soggy. Will not make again.

Family Casserole

This tasted kinda boring. THe water chestnuts are an odd addition. Would suggest leaving that out, and adding another can of cream of something, otherwise it's a little dry.

Chili-Lime Chicken Kabobs

Good recipe! We used the chicken to make "wraps" with bibb lettuce, slivered carrot, chopped red onion, chopped cucumber and a little ranch dressing. Yummy!

Soft Peanut Butter Cookies

Chocolate Eclair Dessert

Loved Loved Loved this recipe!!!!! I used ff/sf cheesecake flavored pudding as suggested in other reviews. Also used whipped chocolate frosting and it seemed to spread ok. It was a little tricky. Definetely worth making again. Made this for a bunch of soldiers, and it was gone in no time! Thanks!

Pumpkin Dip

This is so yummy! I didn't have pumpkin pie spice, so I added a little ginger, nutmeg and ground clove along with the cinnamon. I served it with Cinnamon Graham Cracker Sticks and sliced apples.

Cranberry Sauce I

Wow! This was so good! I've never made cranberry sauce from scratch before, and this was really really easy. I added a little bit of cinnamon at the end, and it was perfect! I can't wait to try some on a turkey sandwich!
