Cajun Cabbage with Rice

Very good. Made as written. Easy, relatively healthy, and can easily be gluten free. We've also made it with bison meat, and it's also good that way.

Tasty Lentil Tacos

Excellent! Healthy alternative for taco night. Made as written, and I wouldn't recommend changing a thing. We've had them w/ soft shells, hard shells, on a taco salad--loved them each time.

Tomato and Avocado Salad

This is very good. Have recently discovered that we like avocados, and this is a nice way to have them. The dressing is very good--sweet.

Cottage Cheese Chicken Enchiladas

These really are as good as everyone's saying. Very easy to make, and great flavor whether you use flour or corn tortillas. Made them twice this week already. (And, I even used chicken breast from a pouch.)

Seafood Enchiladas

I can't believe these turned out so good...especially after all the things I did to screw them up. Used skim milk instead of half and half, low fat sour cream, and half the amount of butter. And, I used shrimp and crab from pouches, not fresh. Even after all of that, these were awesome. Excellent flavor. Easy to make, even for those of us who aren't very good cooks.

Tomato Curry Chicken

This one made even me seem like a good cook...and I'm bad. It was really easy, smells and tastes awesome, and is a great recipe as written. Served it over brown rice. This may be the best recipe I've tried from this site.

Honey Coconut Salmon

I was really disappointed with this. It was sickeningly sweet, and I couldn't even finish my salmon. (And I like to eat!) I followed the recipe exactly as indicated, but consistency was bad (gooey) and again, the sweetness was excessive. Tasted more like candy than fish.

Lime Chicken Soft Tacos

Good stuff! I wouldn't call this a quick or easy recipe (then again, I am not very good at this cooking thing) but it did turn out great. I'm not a fan of oregano, but I like to try the actual recipes on this site as they were intended by their creators. Ended up being a good move--the oregano didn't give the chicken a strong oregano taste, but instead mixed w/ the other flavors to add a unique taste. Good stuff!

Chili I

Despite the high average rating and the dominance of positive comments, I was a skeptic. (I thought people were either prone to hyperbole, or Bob had a large family posting reviews.) But it really is as good as people say it is. I'm a really bad cook, and even I was able to make the best pot of chili I've tasted...and I've tasted a lot of chili. (I'm a bad cook, but a great eater.) My advice is to make it the first time "as is." (I don't normally like sweet-tasting chili either, but using the recommended 1/2 cup wasn't a problem for me.) Several of the negative reviews noted that they changed the recipe, and that may be the problem. Don't be put off by the weird ingredients (have you seen that sweet potato burrito recipe on this site--another example!) Awesome chili.
