Apple Avocado Salad with Tangerine Dressing

One of the best salads I've had. I don't often finish the first course, but this salad was the exception. I made a few changes though. I was more in the mood for feta so that's what I used, cut in decent size bits. I used toasted pecan pieces, not walnuts. I slighly increased the lemon juice, lemon zest, and olive oil for the dressing and slightly increased the pecans, apple, avocado and cheese; also added salt and pepper which it needed. I think with this salad, more and bolder is better. With that said, I will make this dish over and over again, it's fabulous, great flavors and textures. My guests went back for more and I had to remind them that there was a main course. A big hit indeed.

Soft Oatmeal Cookies

This one isn't a keeper. It's not bad mind you, however I don't believe it would take a bit of time to find a better oatmeal cookie recipe. These cookies are okay if eaten within 48 hours but after two days the kids wouldn't even eat them and they ended up in the trash. I cook and bake a lot, I am always in search of the perfect recipe for everything and this one, in my humble opinion, just doesn't make the grade.

Banana Bread I

I added a few things to the recipe and thought I would share. I added one more banana, a tsp. or so of vanilla extract, nutmeg to taste and about a 1/4 cup of pulverized hazel nuts (I turn the nuts into virtual flour so the kids won't notice them and yet I get the nutty flavor...mom's have to be smart about it!) This recipe says to bake for one hour, I set my timer for 50 minutes and was glad I did, it was done, although I only baked one loaf at a time. The kids said this is the best ever and I agree. Very good, dense and moist and you can't beat the smell throughout the house. I don't think the second loaf will make it to the freezer.

Award Winning Soft Chocolate Chip Cookies

Oh, you will so not be disappointed with this recipe. By far the best chocolate chip cookie. I'm not a big sweets person, however I will be fighting my family over these. I used cup of chocolate and cup of butterscotch chips and the end result is fabulous. They came out wonderfully soft and that's hard to maintain after they've cooled. The only mistake I made was cutting the recipe in half to 36...should have made more.

Chicken Cordon Bleu II

Made this for a party of 15 and it was an absolute hit. We will make this over and over again. The sauce is spectacular, although not for anyone on a diet. This is just simply the best recipe out there! You will not be sorry. One small tip...let the sauce simmer for a few minutes, it gets better with time. Oh, and make sure you have lots of french bread for your guests because after they devour the chicken, the sauce is next!
