Honey Mustard Grilled Chicken

This was incredibly easy (even for a grilling novice), yummy, and quick! I pounded the chicken breasts to an even thickness, so it only took about 12 minutes to cook. The sauce was fantastic and made a great dipping sauce - it was nice to have everything on hand for this meal.

Cousin Cosmo's Greek Chicken

This was REALLY good! Next time I'll make sure to pound the chicken thinner - it didn't fold right and took much longer to cook, and the cheese fell out. My mistake! Great with small roasted potatoes.

Orzo with Parmesan and Basil

This tastes yummy but the texture isn't great, and the leftovers are a dry sticky mess, even with added chicken stock the next day. Definitely worth a try, though!

Orange Roughy Parmesan

This dish is great, if anything for it's ease and quickness. I had dinner on the table in 20 minutes and to me, that's really valuable. I used cod fillets and it worked like a dream. Served with the orzo with parmesan and basil from this site (with peas stirred in at the end!) and it was a great easy meal for my husband and I.

Health Nut Blueberry Muffins

These were awesome! They're not going to taste like your regular bakery blueberry muffin but they're fabulous nonetheless. I used ground flaxseed instead of oat bran because that's what I had on hand. Also used 2 mashed bananas per one reviewer's suggestion, and thought it really added moisture. My muffins tasted like banana oat muffins with blueberries! I used frozen blueberries coated in flour and they came out perfectly. Will definitely make again!

Chicken Tikka Masala

I don't claim to be an expert on Indian cuisine, but this was as good, if not better, than our favorite restaurant's tikka masala. The ingredients are simple and the recipe is easy to follow. Like the others, I halved the cayenne and omitted the salt with perfect results. I probably could have added more spice but wanted to play it safe my first time. Made with brown basmati rice and naan. Highly recommend!

Real Hummus

I'm never buying store-bought hummus again. Followed the recipe as is and then just adjusted the ingredients to taste. I like a more lemony hummus, so ended up adding a bit more of that. I used 15-oz cans of garbanzo beans because that's all my store had, and it turned out great.

Slow-Cooker Chicken Tortilla Soup

This soup is wonderful! I threw in frozen chicken breasts (whole) and they ended up perfectly cooked. I shredded them about 20 minutes before serving, and then stirred in some half-and-half per another suggestion to add some richness. Top with shredded cheese and crumbled tortilla chips (I skipped the homemade tortilla strips) - perfect!

Bacon Water Chestnut Rolls

These were a HUGE hit, even with a skeptical husband who scoffed at the mayo in the sauce. I used a non-tomato based Asian chili sauce, and did about 75% that with 25% ketchup - worked perfectly! I also prepared these the night before and baked them without the sauce, and refrigerated overnight. Then, right before company came over, I poured the sauce over and baked the rest of the way. They did need about 5-10 extra minutes, like the other reviewers suggested. Will definitely make again!

Marinated Tuna Steak

I only had 15 minutes to marinade the tuna, and it still turned out perfect. Made the recipe as is, but poured a little extra marinade over the tuna in the grill pan to make a sauce (since I was short on marinade time, I thought this would add flavor). It was very very good! Perfect with quinoa and a veggie.

Cornish Game Hens with Garlic and Rosemary

This was my first time making any kind of whole poultry (I know!) and the recipe couldn't have been easier. I definitely added some stock to the pan right away like other suggested and I'm glad I did - the garlic definitely would have burned. I almost tripled the sauce for two hens and had a little bit of sauce left over. Next time I'll definitely season the inside of the bird before stuffing it with lemon and rosemary.

Greek Style Potatoes

These potatoes were fine, just not great. I added some crumbled feta before serving and that added some great flavor. I'll probably make them again but will add more lemon juice and possibly salt and garlic.

Downeast Maine Pumpkin Bread

This bread was perfectly good, even with the substitution of pumpkin pie spice for the individual spices it calls for. I found that the edges/sides got a little overdone before the middle was even close, so I lowered the temp and cooked just a bit longer.

Easy Pepperoni Bread

SO good! Used refrigerated pizza dough (Pillsbury brand, I think) and baked it for about 5 fewer minutes, and it came out perfect. Will definitely make again for a quick, easy, and yummy appetizer or dinner for two with a side salad.

Easy Garlic-Lemon Scallops

I was almost out of butter, so I used maybe 1/2 Tablespoon of butter and supplemented with olive oil. It turned out SO yummy, though I imagine that with all butter it would be even better. I sprinkled a tiny bit of cayenne on the top. I recommend!
