Cheesy Ham and Hash Brown Casserole

Delicious. A hearty warm brunch dish. I made this while entertaining friends one weekend and everyone devoured it. I have been asked to share the recipe, and it was a definite hit! This is one of the best breakfast casseroles I have made. I used regular sliced deli ham and cubed it up. I would definitely make this one again. It is easy to make and made the house smell all warm and yummy!

Blueberry Congealed Salad

Divine! a tasteful and elegant salad. I would have to use a better jello mold next time because I had trouble inverting it. However, even though it didn't come out in layers like it is supposed to - the taste was absolutely wonderful.

Pork Chops with Italian Sausage

Not bad, but not amazing either. I hesitated to rate it because I hate to be the first to give it three stars, but taste can be subjective so this is just my opinion. I felt it lacked a real robust taste. It was definitely filling, and the pork chops did turn out tender, but the wine made it a bit runny, and I just didn't think this dish was worth raving about. I served it to my husband and we also had compay that day, and while there was very little leftover, I don't think this was a complete hit. I did follow the recipe, so I am attributing it to a different taste.

Wrapped Mexican Eggs

This recipe sounded very appetizing, until I made it and decided it was quite bland. I love salsa verde and have made many recipes using it before, but this was one I did not particularly enjoy. I spent about 25 minutes chopping veggies and preparing this recipe. However the fnished taste was quite average. The salsa was too tart, and I believe this is because the tomatillos are not boiled but chopped and simmered. THe resulting flavor was tart. My 4 year old did not like it, and I spiced mine up with a store-bought guacamole sauce and sour cream. I won't be making this one again.

Chicken Cashew Salad

I loved the taste - but my husband and 4 year old thought it was "too oniony." I would make it again and leave out the onions. I would say the prep time is more like 25 mins because of all the chopping. I ground up the cashews instead of leaving them in halves.

Luscious Lima Bean Soup II

In my husband's words: "For lima beans, this is an excellent meal!". My 4 year old loved it, and my husband thought it was delicious. The house even smelled good making it! It was easy to make, and full of veggies that my child normally wouldn't touch. So I will definitely be making this one again, and it really hit's the spot on a cold winters day.

Bella's Rosemary Red Potatoes

I thought this was a quick and easy way to make potatoes. However I thought the rosemary taste was too strong. It did not work well for my family, since my 4 year old did not care for the rosemary flavoring. Alternatively I would try making this again with a seasoned salt or garlic poweder and completely omit the rosemary.

Greek Garbanzo Bean Salad

I liked this healthful salad, loaded with good nutrients and flavors. I would have added more feta cheese to it. Also it did leave a strong after-taste. I would make it again because it was quick and easy to prepare, and even tasted good as leftovers.
