Sausage Potato Soup

Reviewed: Dec. 9, 2010
Sensational!! This soup is just fantastic. I know people get annoyed when we highly rate recipes and then mention all the changes we make, but I thought two meats in the soup was a little much so I actually replaced the chicken with cannellini beans. That's all. Delicious! A great way to eat kale if the idea of it scares you.

Real Sopapillas

Reviewed: Jun. 18, 2008
PUFFING YOUR SOPAPILLA: I realize this is somewhat an issue commonly discussed so I shall tell you all what needs to happen in order to puff your sopapillas. When you drop the dough into your oil you should then proceed to spoon oil over the dough. Yes, begin this immediately. Once the sopapilla is puffed be sure to remember and flip it so that it browns evenly on both sides. Don't forget that the dough needs to not be a thick piece, as a sopapilla should be hollow on the inside. This will happen if you use thin pieces of dough. I hope this helps everyone. Good luck!

Taqueria Style Tacos - Carne Asada

Reviewed: May 30, 2007
Growing up in a Latino family I had always been very particular with which authentic recipes I wanted to keep. However I could never get over my love for the restaurant style taste of Carne Asada. I searched high and low and finally I fell upon this recipe. I LOVE THIS MARINADE!!! The meat tastes so delicious. If you're looking to imitate the zingy tasting Mexican Restaurant Style Carne Asada,...this is the recipe!

Potato and Bean Enchiladas

Reviewed: May 29, 2007
If anyone is looking for a variation to this recipe; I didn't have time to soften the tortillas in oil so instead I lined the 9x13 pan with the corn tortillas then I spread the bean/potato mixture on top of that and then I layed down another layer of corn tortillas. I poured on the green sauce (which is delicious!) and then I crumbled the queso fresco on top of that. ¡Muy fácil! My husband loved this recipe and next time I'm going to add some ground turkey....
