Easy Homemade Vanilla Ice Cream

Reviewed: Jul. 4, 2012
It is easy, and if you don't want to pay for the expense of heavy cream, this is a passible recipe. It does crystalize after you deep freeze it but the flavor is very good and you can tweak it with all kinds of additions, if desired. I added cardamon to it and it was wonderful.

Quick and easy. Tasty too. And, if you fib on some of the ingredients - adding more or less - you still come out with something that tastes great on chicken.

Kulfi

Reviewed: Jan. 11, 2011
Ohhhhh my this is some good stuff! I suggest you store in a plastic container with a snap-on lid as to keep the freezer taste/smell off your kulfi. Of course, if you're like us, you'll eat it up before that can happen anyway - but it makes a lot, so you might think about it.

Delicious Ham and Potato Soup

Reviewed: Jan. 11, 2011
We liked it! Easy to prepare, healthy and full of flavor. Used a scant bit less milk as we like our cream soups on the thicker side.

This was absolutely divine. Took a while to make but it was well worth it. It was a snowy, wintery night when we had this and it warmed us all right up.

Eggplant Parmesan II

Reviewed: Jan. 17, 2009
Very good! The first night we had it it was just okay. (I have a few modifications I'll make next time to make it better for us.) I took the leftovers to work a few days later and to my surprise, it was much improved after sitting in the fridge for a day or two! Loved it. Convinced me to make it again. My changes: 1. Use seasoned oat flour instead of breadcrumbs to coat the eggplant. (Great if you're on a no-flour diet) 2. Slice eggplant no more than 1/4 - thinner will crisp up even faster. 3. Next time I will try pan-frying the eggplant to get them nice and crispy so they aren't soggy after baking.

Quick and Easy Vegetable Curry

Reviewed: Jan. 14, 2009
Delicious. Spicy, and full of goodness - I felt so fortified eating this. By the way, any veggies you have on hand will do - this is a great way to get rid of those last little bits of veggies hanging out in the cooler box - just cut them up and toss them in. Thanks! We'll definitely be having this again.

Chocolate Banana Bread Pudding

Reviewed: Dec. 13, 2008
Delicious! Added really ripe bananas to the egg mixture instead of slicing them up. Seemed to heighten the flavor and make it even stronger. Husband loved it and finished HALF a pan while I was at work. So I made him cook a fresh batch - he doubled it and put it in an 13 x 9 pan. The only thing about this is it didn't seem to cook in the time allotted. Was about twice as long - and I used hot water for the bath. Even the second batch which was done in a flatter area still took forever (2+ hrs.) to cook. Regardless, it's worth the wait and a delicious winter dessert.

Tiramisu Cheesecake

Reviewed: Dec. 7, 2008
The texture was sublime and velvety - wonderful. Presentation was beautiful and got lots of ooohs and aaaahs. People really liked it but I thought it was lacking in flavor for as much good stuff as there was in it. Probably too expensive to try this one again.

Fixed this recipe for my husband and he said "This is the best potato soup I've ever had!". I substituted skim milk instead of cream - because it's what I had on hand and it was still fantastic! Easy, quick and delicious!
