Brown Rice, Broccoli, Cheese and Walnut Surprise

This gets 5 stars with the changes I made to it. Before, I found it lacked a little something. I took the advice of many reviewers and made this as a casserole instead. I used real brown rice instead of instant and olive oil instead of butter. I used low-fat cheese, too, and I don't think it affected the taste. I added extra broccoli because we love it and steamed it in the microwave for about 4 minutes before adding it to the rice, onion, cheese mixture. The major change I made was adding shelled, toasted pumpkin seeds instead of walnuts. They seem to add just the right touch of crunch and salt to the recipe. Then I baked the whole thing at 350 for about 20 minutes. My kids love this, too.

Glazed Pearl Onions With Raisins And Almonds

This was delicious. I brought it to a pot luck and everyone raved about it. The only change I made was to cook it UNcovered. I cooked it for an hour and a half and the liquid never reduced with it covered. Once I uncovered it, things moved along smoothly. Also, I used two bags of frozen pearl onions to make things go faster.

Cauliflower and Kale with Mustard Currant Dressing

A good recipe but not one of the best. Needed a lot more of the sauce. I ended up adding more lemon juice and olive oil in the end. We all enjoyed it served over rice as a main dish -- I just wanted more flavor.

Lazy Pierogi

Honestly, just okay. The recipe makes a TON -- literally filled my dutch oven -- and takes quite a while to cook. I ate all the leftovers but probably won't make it again. If I'm feeling lazy, I'll just go with frozen pierogis!
